Drenda’s Coconut Cake

Make and bake cake according to cake mix directions in a 9x13 pan
- 1 pkg. reduced fat yellow cake mix
- 1 can fat-free Eagle Brand milk
- 1 can Cream of Coconut
- 8 oz. fat-free Cool Whip
- 1 pkg. frozen coconut
Holy Cow

Prepare a German chocolate cake mix according to the directions on box
- German chocolate cake mix
- Eagle Brand Sweetened Condensed milk
- 10 oz. jar of caramel (ice cream) topping.
Grilled Corn and Smoked Chicken Soup

Bring chicken stock to a boil and reduce to a simmer
- 8 cups chicken stock
- 6 tablespoons apple-smoked bacon, diced 1/8”
- 3/4 cup smoked chicken breast, diced 1/4”
- 3/4 cup grilled corn (approx. 3 ears)
- 3/4 cup red onion, finely chopped
- 1/2 cup cilantro leaves
- 1/2 cup roma tomatoes, peeled, seeded and diced 1/4”
- 2 jalapenos, diced with seeds
- 6 wedges of lime
- 1 ripe avocado, cut into 6 wedges
- 1 1/2 cups tortilla strips 1/8”, fried crisp
- 1 1/2 cups sour cream
White Bean Soup

Makes 5 (3/4-cup) servings, each containing approximately: 150 calories 23 gm
- 1/3 cup diced yellow onion
- 1/4 cup peeled and diced carrots
- 1/4 cup diced celery
- 1 teaspoon minced fresh garlic
- 1 tablespoon extra virgin olive oil
- 1 cup small white beans, soaked overnight and rinsed
- 1 1/2 quarts vegetable stock
- Dash liquid smoke
- 1/4 teaspoon dry basil
- Pinch dry oregano
- Pinch dry thyme
- 3/4 teaspoon sea salt
- Pinch freshly ground black pepper
- 1/2 teaspoon Worcestershire sauce
- 1 1/2 teaspoons chopped fresh parsley
- 1/2 teaspoon fresh lemon juice
Chicken Spaghetti

Cook spaghetti. Saute pepper and onion
- 8 oz cooked, thin spaghetti
- 1/2 cup green pepper
- 1/2 cup onion
- 3-4 cups chredded chicken (can use canned)
- 2 oz. chopped, undrained pimento
- 10 3/4 oz. Cream of Chicken soup
- 8 oz. Jalepeno cheese spread
- 1 cup half and half whipping cream (can use milk)
- 1/2 + tsp. powder garlic
- 2 oz. sliced black olives

Russian Chicken

Cut chicken in pieces and put in baking dish
- 3 lb fryer chicken
- 1 pkg Lipton Onion Soup Mix
- 1 (6-8 oz) Jar of Apricot preserves
- 1 8 oz bottle Russian dressing
Chili Rubbed Tequila Shrimp

Makes 4 servings; each serving contains approximately: 195 calories 2 gm
- 1/4 teaspoon sea salt
- 1/4 teaspoon chili flakes
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon water
- 16 peeled and de-veined shrimp
- 1 teaspoon canola oil (or cooking spray)
- 2 teaspoons minced garlic
- 1/4 cup tequila
- 2 tablespoons chopped cilantro
- 1 tablespoon fresh lime juice

Combine sugar, margarine and milk in heavy saucepan, bring to rolling boil, stirring constantly
- 3 cups sugar
- 3/4 cup margarine
- 2/3 cup evaporated milk (5 oz. can)
- 12 oz semi-sweet chocolate chips
- 7 oz marshmallow cream
- 1 cup chopped nuts
- 1 teaspoon vanilla
Mother's Rolls

Mix all ingredients in large bowl and let stand for 2 hours
- 2 package of dry yeast
- 2 cups hot water (125-150)- hot tap water
- 1/2 teaspoon salt
- All purpose flour: enough to make stiff dough (apprx. 6 cups)
- 1/2 cup sugar
- 1/2 cup cooking oil
Amaretto Sour Cream Cake

- Glaze:
- 2 eggs, separated
- 1/2 cup browns sugar, packed
- 1 cup flaked coconut
- 1/2 cup ground pecans
- 1 package pillsbury pudding, butter cake mix
- 1 cup sour cream
- 1/2 cup Amaretto
- 1/2 cup water
- 2 eggs
- 1 cup powdered sugar, sifted
- 2 Tablespoons Cocoa
- 2 Tablespoon Amaretto
- 1 Tablespoon Butter, softened
- 1 Tablespoon Corn Syrup
- 2 Teaspoon Water
- 2 Teaspoon Ground Pecans
- 6 maraschino cherries
