ALMOND JOY COOKIES

Pre-heat oven to 375°F Lightly grease cookie sheets
- 1 cup butter
- 1 1/2 cups white sugar
- 1 1/2 cups brown sugar
- 4 eggs
- 3 teaspoons vanilla
- 4 1/2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 5 cups chocolate chips
- 2 cups sweetened coconut
- 2 cups chopped almonds
Pumpkin Pie Pancakes

Into medium-large bowl, mix all ingredients except syrup until smooth
- 1 egg, beaten
- 1 1/4 cups fat-free (skim) milk
- 2 cups Bisquick Heart Smart® mix
- 1/2 cup canned pumpkin (not pumpkin pie mix)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- Real maple syrup, if desired
Vickie's Gazpacho Dip

Combine tomatoes, avocados, onions, and chiles in a large bowl; set aside
- 3 tomatoes, diced
- 3 avocados, peeled, pitted and diced
- 4 green onions, thinly sliced
- 4.5 oz. can diced green chiles, undrained
- 3 T. olive oil
- 1-1/2 T. cider vinegar
- 1 t. garlic salt
- 1/2 t. salt
- 1/4 t. pepper
Orange Creamsicle Cheesecake

Mix softened cream cheese, sweetened condensed milk and orange juice with mixer
- 16 ounces cream cheese
- 6 ounces can of frozen orange juice
- 1 can sweetened condensed milk
- 10 ounces of Pastry Pride, whipped 6 to 10 minutes
Potato Chip Cookies

Preheat oven to 300 degrees F
- 2 cups (4 sticks) butter, softened
- 1 cup sugar
- 3 1/4 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1 1/2 cups coarsely crushed potato chips
Beef & Bean Enchiladas

In large saucepan, cook beef over medium heat until no longer pink; drain
- 1 pound ground beef
- 2 cans (16 ounces each) refried beans
- 1-1/2 teaspoons dried minced onion
- 1 to 2 teaspoons chili powder
- 1/2 teaspoon salt
- 10 flour tortillas (8 inches), warmed
- 1/4 cup chopped onion
- 1-1/2 cups (6 ounces) shredded cheddar cheese, divided
- 1 can (10 ounces) enchilada sauce, warmed
- 1 can (2-1/2 ounces) sliced ripe olives, drained
Crunchy Potato Fish Fry

Combine potato granules and sesame seeds in large shallow dish
- 1 (2-ounce) envelope instant mashed potato granules
- 2 tablespoons sesame seeds
- 1 large egg, lightly beaten
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 (24-ounce) package or 2 (12-ounce) packages frozen fish fillets, thawed
- 1/4 cup vegetable oil
- Lemon wedges (optional)
Spinach-Cheese Balls

Heat oven to 400°. Spray cookie sheet with cooking spray
- 1 box (9 oz) frozen spinach, thawed, squeezed to drain
- 1 cup Original Bisquick® mix
- 2 cups shredded mozzarella cheese (8 oz)
- 1 egg
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic salt
- 1 cup tomato pasta sauce, if desired
Brownie Chocolate Cake

- 1 1 1 box Duncan Hines Devils Food Cake Mix
- 1 1 1 box Duncan Hines Fudge Brownie Mix
- 4 4 4 eggs
- 1 1/4 1 1/4 1/4 Cup water
- 1 1 1 cup vegetable oil
Spicy Chili Mac

Cook macaroni according to package directions
- 2 cups uncooked whole wheat elbow macaroni
- 1 pound lean ground turkey
- 1 small onion, chopped
- 2 to 3 jalapeno peppers, seeded and chopped
- 2 teaspoons olive oil
- 2 garlic cloves, minced
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 to 2 tablespoons hot pepper sauce
- 2 to 3 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon pepper
- 3/4 cup shredded reduced-fat cheddar cheese
