1. Preheat oven to 400 degrees F and position oven rack in middle
- 2 tablespoon olive oil
- 1 cup chopped onion
- 2 garlic cloves
- 1 ½ pounds sweet Italian sausage (Out of casings)
- 1 large (28 ounce) can crushed Italian tomatoes
- 1 (6 ounce) can tomato paste
- ¼ cup chopped parsley
- ½ cup chopped basil leaves
- 2 teaspoon sea salt
- ¾ teaspoon pepper
- ½ box lasagna noodles
- 1 [pound whole milk ricotta cheese
- 1 cup grated Parmesan cheese
- 1 extra large egg
- 1 pound whole milk mozzarella cheese
- ¼ cup Parmesan cheese For topping
Spicy Mexican Omelet

Seed and dice the red pepper, yellow pepper and jalapeno
- 1 red pepper ($.75)
- 1 yellow pepper ($.75)
- 1 jalapeno ($.05)
- Couple sprigs cilantro ($.05)
- 8 eggs (or 2-3 per omelet, depending on how big the omelet you want to make) ($.80)
- 1/4 cup milk ($.05)
- Salt and pepper
- Canola or vegetable oil for the skillet, about 1 Tbsp for each omelet ($.10)
- 1-2 cups shredded Monterey Jack cheese ($.67-$1.25)
- Fresh fruit, side ($.75-$1)

Blend together cake flour, sugar,nonfat dry milk, salt and baking powder
- 950 grams Cake Flour
- 1 ,332 grams Sugar
- 113 grams Non-Fat Dry Milk
- 21 grams Salt
- 43 grams Baking Powder
- 475 grams Sweetex Shortening
- 780 grams Water
- 496 grams Egg White
- 57 grams Water
- Flavoring, To taste
- Turn mixer to speed 1 and add slowly while blending. After 30 sec. stop mixer and scrape bowl and paddle. Blend on speed 1 for 3 min. Scale 350g (12 1/3 oz.) into 8-in. round, well greased cake pans. Bake at 350o F for approx. 23 min.
Baked Chocolate Doughnuts with Maple Glaze

- 1 Heat oven to 425°F. Spray mini doughnut pan with cooking spray.
- 2 In medium bowl, mix all doughnut ingredients with spoon until blended. Spoon batter into pan, using about 1 tablespoon for each doughnut.
- 3 Bake 6 to 8 minutes or until toothpick inserted near center comes out clean. Remove doughnuts from pan to cooling rack; cool 5 minutes.
- 4 Meanwhile, in small bowl, mix powdered sugar and syrup with whisk until smooth.
- 5 Dip tops of doughnuts in glaze; sprinkle with maple flakes. Serve warm.
