Dixie Fried Chicken

- 2 1/2 to 3 pounds broiler-fryer, cut up, or 2 1/2 pounds assorted chicken pieces
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground red pepper
- 1 egg, lightly beaten
- 1/3 cup milk
- Vegtable oil
- 1/4 cup reserved pan drippings
- 1/4 cup all-purpose flour
- 2 1/2 to 3 cups hot milk
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Dash of ground red pepper
Browned Butter Chicken Fettuccine

Cook pasta according to package directions; drain and keep warm
- 12 ounces dried fettuccine, uncooked
- 1/2 cup butter
- 4 boneless, skinless chicken breasts, cut into strips
- 1 clove garlic, crushed
- 1 (2-1/4-ounce) package slivered almonds, toasted (see Note)
- 1/2 cup chopped fresh parsley
- 2 tablespoons dry white wine or 2 tablespoons chicken broth
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 cup grated Parmesan cheese

Fancy Fast Chicken

Preheat oven to 350 degrees F
- 6 boneless, skinless chicken breast halves
- 6 slices Swiss cheese (1 ounce each)
- 1/4 pound fresh mushrooms, sliced (optional)
- 1 can (10-3/4 ounces) condensed cream of chicken soup
- 1/2 cup dry white wine
- 2 cups herb-seasoned stuffing mix
- 8 tablespoons butter, melted
Gnocchi Chicken Skillet

Cook gnocchi according to package directions
- 1 package (16 ounces) potato gnocchi
- 1 pound ground chicken
- 1/2 cup chopped onion
- 2 tablespoons Extra Virgin Olive Oil
- 1 jar (26 ounces) spaghetti sauce
- 1/4 teaspoon salt
- 1/4 to 1/2 teaspoon dried oregano
- Shredded Parmesan cheese, optional
Apple Pie

Preheat oven to 425 degrees
- For pie filling:
- 1 9" double pie crust
- 7 to 8 apples (about 3.5 lbs), peeled, cored, and sliced (I used a mixture of Granny Smith, Jonagold, and Braeburn)
- 1 tablespoon lemon juice
- 1/2 cup butter
- 3 tablespoons all-purpose flour
- 1/4 cup apple juice (or water)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 3/4 teaspoon cinnamon (or apple pie spice)
- 1/4 teaspoon salt
- For top of pie:
- 1 egg or 1 egg white, lightly beaten
- 2 teaspoons sugar
- scant 1/4 teaspoon cinnamon

- 6 1/2 ounces bittersweet chocolate, broken into pieces

- 2 teaspoons vanilla extract
- 1 cup whipped cream, for topping
