Caramel Apple Breakfast Casserole

1. In a mixing bowl, whisk eggs, milk, cinnamon and nutmeg
- 6 eggs ($.60)
- 1 cup milk ($.10) I used rice milk
- 1 tsp cinnamon ($.05)
- 1/4 tsp nutmeg ($.02)
- 4 medium or 3 large apples, peeled and diced ($1) On sale 4/$1 this week!
- 1/4 cup butter or margarine, melted ($.40) I used a dairy-free margarine
- 1/4 cup brown sugar ($.20)
- 1 tsp cinnamon ($.05)
- 6 slices of bread, torn ($.30)
- 1/2 Cantaloupe ($.75) On sale 2 weeks ago for $1.49!
- Syrup (optional…I thought it sweet enough and syrup unnecessary!)

Fiesta Quesadillas

Combine first 8 ingredients
- 1 1/2 cups diced cooked ham
- 3 plum tomatoes, seeded and chopped
- 1 cup crumbled goat cheese
- 1/2 medium-sized red onion, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- 1/4 cup (2 ounces) cream cheese, softened
- 1 (4.5-ounce) can chopped green chilies, drained
- 6 (8-inch) flour tortillas
- Cooking spray
Jack Daniels Old Time Barbecue Sauce

Preparation: Combine all ingredients and bring to a boil
- 1 cup apple-cider vinegar
- 1 teaspoon salt
- 1 tablespoon celery salt
- 1/2 cup ketchup
- 1/2 teaspoon chili powder
- 1/8 teaspoon nutmeg
- 1/2 teaspoon brown sugar
- 1 cup water
Better-Than-Almost-Anything Cake

1 Heat oven to 350°F (325°F for dark or nonstick pan)
- 1 box German chocolate cake mix
- Water, vegetable oil and eggs called for on cake mix box
- 1 can (14 oz) sweetened condensed milk
- 1 jar (16 to 17 oz) caramel, butterscotch or fudge topping
- 1 container (8 oz) frozen whipped topping, thawed
- 1 bag (8 oz) toffee chips or bits
Hot Dog Kebobs

Preheat grill to medium heat
- 1/2 cup chili sauce
- 3 tablespoons brown sugar
- 2 tablespoons deli mustard
- 1 (16-ounce) package quarter-pound kosher beef franks, cut into 16 pieces (see Note)
- 2 ears fresh corn, cut into 1-inch slices
- 1 green bell pepper, cut into 12 pieces
- 1 small red onion, peeled and cut into half-moons
- 1 red bell pepper, cut into 12 pieces
- 4 (12-inch) metal skewers
Pumpkin Tarts

Thoroughly combine pumpkin, sugar, salt, and spices
- 1 1/2 cups canned pumpkin
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1/4 to 1/2 teaspoon nutmeg
- 1/4 to 1/2 teaspoon cloves
- 1 to 1 1/4 teaspoons cinnamon
- 1/2 to 1 teaspoon ginger
- 3 slightly beaten eggs
- 1 1/4 cups milk
- 1 6-oz. can (2/3 cup) evaporated milk

Lo Mein Ramen

In a skillet mix oil, soy sauce and 1/2 seasoning packet
- 1 package chicken ramen noodles
- 2 cups water
- 1 pound chicken breast strips
- 1/2 cup onions, sliced
- 1/2 cup green peppers, chopped
- 1/4 cup carrots, chopped
- 1 tablespoon oil
- 1 tablespoon soy sauce
Banana-Chip Mini Cupcakes

In large bowl, combine muffin mix, water, sour cream and egg; stir just until moistened
- 1 package (14 ounces) banana quick bread and muffin mix
- 3/4 cup water
- 1/3 cup sour cream
- 1 egg
- 1 cup miniature semisweet chocolate chips, divided
- 1 tablespoon shortening
Rotisserie Chicken Casserole

This is a quick and easy dinner you can make if you're short on time
- 3 cups diced rotisserie chicken, or any other cooked chicken
- 1 can cream of chicken soup
- 1 cup uncooked rice, cooked, about 2 1/2 to 3 cups cooked rice
- 1/2 cup sliced almonds
- 1/2 cup mayonnaise
- 3/4 cup diced celery
- 1/2 to 3/4 crushed corn flakes
- 2 tablespoons butter, melted
Fried Onion Rings

Peel onion; slice about 1/4 inch thick; separate into rings
- Batter:
- 1 large Bermuda onion (1/4 pound)
- 1 cup sifted all-purpose flour
- 2 teaspoons salt
- 1 1/2 teaspoons baking powder
- 1 egg yolk
- 2/3 cup milk
- 1 tablespoon salad oil
- 1 egg white
- Shortening or oil for deep-fat frying
