Chocolate Pecan Torte

Place oven rack in center position and heat oven to 350 degrees F
- 1/2 cup pecans; toasted
- 1/4 cup All-purpose flour
- 1/4 teaspoon Salt
- 4 large Eggs; separated, and at room temperature
- 6 ounces semisweet or bittersweet chocolate; chopped (I prefer Ghirardelli semisweet)
- 3/4 cup unsalted butter; (1 1/2 sticks) cut into pieces (plus additional for greasing pan)
- 3/4 cup sugar; divided
- 1 teaspoon Vanilla extract
- 1 tablespoon rum, cognac or brandy; (optional) (I use Myers's Dark Jamaican Rum)
- 1/4 teaspoon Cream of tartar
- Cocoa powder; (for dusting pan)
- Ganache (optional) --
- 8 ounces semisweet or bittersweet chocolate; chopped (I prefer Ghirardelli semisweet)
- 2/3 cup Heavy cream
- 2 tablespoon Unsalted butter
- 1 tablespoon rum; cognac or brandy (optional) (I use Myers's Dark Jamaican Rum)
- Garnish (optional) --
- Pecans; toasted and finely chopped
- Equipment; (optional but very desirable for ease of handling) --
- 1 9-inch corrugated cardboard cake circle
Vegetable Fried Rice

In skillet, cook 4 beaten eggs in 1 tbsp oil; slice cooked egg and reserve
- 4 beaten eggs
- 2 tablespoons oil
- 2 ribs sliced celery
- 1 sliced onion
- 1 green pepper
- 1 carrot
- 3 cups cooked rice
- 1/2 cup vegetable broth
- 3 tablespoons soy sauce
- 2 tablespoons ketchup
- 2 chopped scallions
Sausage and Pepper Skewers

Preheat oven to 350 degrees F
- 16 (6-inch) wooden or metal skewers (see Note)
- 1 pound Italian rope sausage, cut into 16 pieces
- 1 red bell pepper, seeded and cut into 8 strips
- 1 green bell pepper, seeded and cut into 8 strips
- 1 cup spaghetti sauce, warmed
Espresso Shortbread Cookies

Preheat oven to 300°. In small bowl, dissolve coffee in water; set aside
- 1 tablespoon instant coffee granules
- 1 tablespoon boiling water
- 1 cup (2 sticks) butter
- 3/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 2-1/4 cups all-purpose flour
- 4 ounces white chocolate, melted (optional)
Almond Puff

In a bowl, cut butter into flour until mixture resembles coarse crumbs
- PUFF LAYER:
- 1/2 cup cold butter
- 1 cup all-purpose flour
- 2 tablespoons water
- 1 cup water
- 1/2 cup butter
- 1 cup all-purpose flour
- 1 teaspoon almond extract
- 3 eggs
- GLAZE:
- 1-1/2 cups confectioners' sugar
- 2 tablespoons butter, softened
- 1 teaspoon almond extract
- 1 to 2 tablespoons warm water
- 2 tablespoons sliced almonds, toasted and chopped
Taco Bake #2

HEAT oven to 400°F. PREPARE Dinner as directed on package
- 1 pkg. (14 oz.) Macaroni & Cheese Dinner
- 1 lb. ground beef
- 1 pkg. (1-1/4 oz.) Taco Seasoning Mix
- 3/4 cup Sour Cream
- 1-1/2 cups Shredded Cheddar Cheese, divided
- 1 cup Thick 'N Chunky Salsa
