Grilled Chicken and Squash Salad with Lime-Taco Dressing

1 Heat coals or gas grill for direct heat
- 4 boneless, skinless chicken breast halves (1 1/4 pounds)
- 1 small butternut squash, peeled and cut into 1- to 1 1/2-inch pieces (about 3 cups)
- 1 medium red onion, sliced
- 1 bag (10 ounces) torn mixed salad greens (romaine, iceberg and leaf lettuce or another mix)
- 1 medium avocado, pitted, peeled and diced
- 2 tablespoons chopped fresh cilantro
- 3/4 cup frozen limeade concentrate, thawed
- 1/3 cup olive or vegetable oil
- 2 tablespoons honey
- 1/4 teaspoon ground ginger
- 1 envelope (1 oz) taco seasoning mix

- Kosher or sea salt to taste
- 1/4 cup fresh flat leaf parsley, chopped
- 1 cup chicken broth, low sodium, fat free
Burgundy Beef Casserole

Preheat oven to 375 degrees F
- 2 1/2 cups water
- 1 1/2 cups Burgundy or other dry red wine
- 1 (10 3/4 ounces) can condensed golden mushroom soup
- 2 pounds boneless beef top sirloin steak, trimmed and cut into 1-inch cubes
- 1 (6 ounces) package uncooked long-grain and wild rice mix with seasoning packet

- 1/4 cup butter, melted
- 1 package (8 ounces) cream cheese, softened
- 1 can (14 ounce can) sweetened condensed milk
- 1/2 cup peanut butter
- 1/4 cup powdered sugar
- 1 tub (8 ounces) Cool Whip, thawed
