Lunch Wagon Favorite Meatloaf

Preheat oven to 350 degrees
- Sauce:
- 3 lbs. ground beef
- 2 medium onions, chopped
- 1 c. panko (Japanese bread crumbs)
- 2 large eggs
- 1 tsp. salt
- 1 tsp. garlic salt
- 1 tsp. freshly ground black pepper
- 1 (8 oz.) can tomato sauce
- 2 (8 oz.) cans tomato sauce
- 1/2 c. water
- 2 TB brown sugar
- 2 TB white vinegar
- 2 TB yellow mustard
- 2 TB Aloha shoyu
- 2 tsp. Worcestershire sauce

1 Heat oven to 350°F (325°F for dark or nonstick pan)
- 1 can (15 oz) pumpkin (not pumpkin pie mix)
- 1 can (12 oz) evaporated milk
- 3 eggs
- 1 cup sugar
- 4 teaspoons pumpkin pie spice
- 1 box yellow cake mix or spice cake mix
- 1 1/2 cups chopped pecans or walnuts
- 3/4 cup butter or margarine, melted
- Whipped cream, if desired
- Additional pumpkin pie spice, if desired

- 1 envelope unflavored gelatin
- 1 cup fat-free milk
- 1/2 cup sugar
- Dash salt
- 2-1/2 cups vanilla yogurt

Coffee-Rubbed Cheeseburgers with Texas Barbecue Sauce

For coffee rub: Mix all ingredients in small bowl
- 1 tablespoon freshly ground coffee
- 2 teaspoons (packed) golden brown sugar
- 2 teaspoons freshly ground black pepper
- 1/2 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- 1/2 teaspoon fine sea salt
- 8 slices applewood-smoked bacon
- 1 pound ground chuck (preferably grass-fed)
- 1 pound ground sirloin (preferably grass-fed)
- 8 slices smoked provolone, smoked caciocavallo, or smoked Gouda cheese (about 8 ounces)
- 8 potato-bread hamburger
- 8 slices red onion
- 8 slices tomato

- 1 box chocolate cake mix (for layer cake)
- 1 (4-serving) box chocolate instant pudding and pie filling mix
- 1 cup water
- 1 stick (1/2 cup) softened butter
- 4 eggs
- 1 tsp peppermint extract
- 1 cup milk chocolate chips
- 1 cup chopped round hard peppermint candies
- 1 cup vanilla frosting
- 2 cups chocolate frosting
- Softened vanilla or peppermint ice cream (optional)
Bacon-Ranch Quesadillas

- Cooking spray
- 1/4 cup Ranch dressing
- 4 (8-inch) flour tortillas
- 1 cup (4 ounces) shredded Mexican four-cheese blend
- 4 bacon slices, cooked and crumbled
- 1 plum tomato, seeded and chopped

- 3 T. butter
- 1 onion, finely chopped
- 1 carrot, peeled and finely chopped
- 1 stalk celery, finely chopped
- Optional: 1 jalapeño pepper, seeded and chopped
- 3 T. all-purpose flour
- 1 C. chicken broth
- 2 c. milk or half-and-half
- 2 c. shredded extra-sharp Cheddar cheese
- 1/2 c. beer or non-alcoholic beer, at room temperature
- 1/8 t. cayenne pepper
- 1/4 t. salt
- 1/4 t. pepper
- Garnish: 2 T. green onions, chopped

- 1/4 c. grated Parmesan cheese, divided
- 1-1/2 T. butter
- 2 T. all-purpose flour
- 3/4 c. milk
- 1-1/4 c. shredded Cheddar cheese
- 1/4 lb. American cheese slices, chopped
- 1 egg yolk, beaten
- 1/4 t. paprika
- 8-oz. pkg. elbow macaroni, cooked

- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon poultry seasoning
- 1/4 teaspoon pepper
- 1 1/4 cups fat-free (skim) milk
- 1/2 cup finely chopped onion
- 1 can (10 3/4 oz) condensed 98% fat-free cream of chicken soup
- 1/4 cup fat-free sour cream
- 4 boneless skinless chicken breasts (1 1/4 lb), cooked, cut into bite-size pieces (about 4 cups)
