Queso Blanco Dip

Place cheese, chiles, and the optional jalapenos to slow cooker
- 1 (16 ounce) queso blanco Velveeta loaf, cut into 1-inch cubes
- 2 (4.5 ounce) cans Old El Paso chopped green chiles, or similar
- 1 (4 ounce) can diced jalapenos (optional, to taste)
Savory Mushroom & Herb Pork Roast

Place onions and carrots in 5-qt slow cooker
- 2 medium onions, chopped
- 12 fresh baby carrots
- 1 boneless pork shoulder butt roast (3 to 4 pounds)
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 3/4 cup chicken broth
- 1 can (4 ounces) mushroom stems and pieces, drained
- 1/2 teaspoon dried thyme
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon dried rosemary, crushed
- 1/4 teaspoon dried marjoram
- 1/4 teaspoon pepper
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- French-fried onions, optional
Parmesan-Crusted Tilapia

Place flour and egg in separate shallow bowls
- 1/2 cup all-purpose flour
- 1 egg, beaten
- 1/2 cup crushed butter-flavored crackers (about 10 crackers)
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 4 tilapia fillets (5 ounces each)
- 2 tablespoons olive oil

Buttermilk Oven-Fried Chicken

- 1 cup low-fat buttermilk
- 4 (8-ounce) bone-in chicken breast halves, skinned
- 1/3 cup all-purpose flour
- 1/3 cup cracker meal
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons butter
New England Clam Spread

Preheat oven to 350 degrees F
- 1 (6-1/2-ounce) can minced clams, undrained
- 1 (10-1/2-ounce) can white clam sauce
- 1 (4-ounce) strip saltine crackers, crumbled
- 4 drops hot pepper sauce
- 1/2 teaspoon dried oregano
- 1 medium-sized onion, chopped
- 6 tablespoons (3/4 stick) butter
Beef Stroganoff Casserole

1. Heat oven to 350 degrees
- 2 tablespoons vegetable oil
- 1/2 teaspoon each salt and black pepper
- 1 pound sirloin or beef tips, cut into 1-inch pieces
- 1 medium onion, diced
- 1 10 ounce package cremini mushrooms, cleaned, trimmed and sliced
- 3 tablespoons all-purpose flour
- 1 14 1/2 ounce can beef broth
- 2 tablespoons dry sherry (optional)
- 1 12 ounce bag egg noodles
- 1 cup sour cream
- 2/3 cup french-fried onions
Island Flair Pumpkin Pie

Preheat oven to 350° Fahrenheit
- For Crust:
- 14 2-inch gingersnaps (about 4 ounces)
- 1 c. pecans (about 4 ounces)
- 1/4 c. granulated sugar
- 1/2 stick (1/4 cup) unsalted butter, melted and cooled
- For Pie:
- 1 15-ounce can pure pumpkin
- 1 c. (packed) dark brown sugar
- 3 large eggs, lightly beaten, at room temperature
- 1 1/4 c. heavy whipping cream (see note)
- 2 tbsp. dark rum
- 2 tbsp. finely chopped crystallized ginger
- 1 tsp. ground cinnamon
- 1 tsp. grated orange peel
- 1/4 tsp. ground nutmeg
- 1/4 tsp. salt
- Preheat oven to 350° Fahrenheit.
- To make crust, combine gingersnaps, pecans and sugar in a food processor, grind. Add
- butter, blending until combined well.
- Press mixture onto bottom and up side of a 9-inch (1 quart) glass pie plate. Bake crust in
- middle of oven 13 to 15 minutes, or until crisp and golden around edge, and cool on rack.
- Meanwhile, whisk pumpkin and brown sugar in medium bowl to blend. Add all
- remaining ingredients and whisk until blended. Pour filling into baked crust.
- Bake pie until filling is set in center, about one hour. Transfer pie to rack; cool 30
- minutes. Can be made one day ahead. Cover and keep chilled. If desired when serving,
- top each slice with additional whipped cream and sprinkle with additional crystallized
- ginger.
- Note: Evaporated skim milk may be used in place of heavy cream, in the same amount.
- Makes one 9-inch pie. Serves eight

- 1 medium red bell pepper, cut into 1/2-inch strips
- 1 large onion, cut into 1/2-inch wedges
