Lemon Salt Marinated Pork Tenderloin

- 6 lemons
- 1 1/2 tablespoons salt
- 2 tablespoons extra-virgin olive oil
- Freshly ground black pepper
- 2 pork tenderloins (about 1 1/2 pounds total)
- Honey Roasted Applesauce, recipe follows
- 6 apples, Gravenstein or McIntosh
- 2 tablespoons sweet butter
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon finely ground sea salt, preferably gray salt
- 1/3 cup honey
