  • 2 cups buttermilk
  • 2 eggs, separated
  • 3/4 cup beer, lager or pale ale
  • 3/4 cup all-purpose flour
  • 3/4 cup white cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 4 cups peanut oil
  • Sea salt
  • Garlic Aioli, recipe follows
  • 1 cup mayonnaise
  • 1/3 cup fresh lemon juice
  • 1/2 tablespoon Dijon mustard
  • 1 lemon, zested
