Beer-battered Asparagus with Garlic Aioli

- 1 bunch medium asparagus, ends trimmed
- 2 cups buttermilk
- 2 eggs, separated
- 3/4 cup beer, lager or pale ale
- 3/4 cup all-purpose flour
- 3/4 cup white cornmeal
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 4 cups peanut oil
- Sea salt
- Garlic Aioli, recipe follows
- 1 cup mayonnaise
- 1/3 cup fresh lemon juice
- 1/2 tablespoon Dijon mustard
- 1 lemon, zested
- 4 tablespoons finely minced garlic
- 1 tablespoon minced fresh tarragon leaves
- 1/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper

Eggs Benedict with Chipotle Hollandaise

- 1/2 cup (1 stick) unsalted butter
- 3 large egg yolks
- 2 tablespoons hot water
- 1 tablespoon plus 1 teaspoon fresh lemon juice
- 1/8 teaspoon salt
- 1 tablespoon sauce from a can chipotles in adobo
- 1 1/2 teaspoons dried oregano
- 1/2 teaspoon paprika
- 4 slices Canadian bacon

My Sweet Italian Angel

- Water
- 1 shot limoncello, look for the small airplane size bottles if you don't want the investment of a larger one
- 1 store-bought angel food cake
- 1 lemon, zested
- 3 cups whole milk ricotta cheese

- 1 1/2 pints total mixed berries such as blueberries, strawberries, raspberries or blackberries
