Peachy Bourbon Ice Cream with Caramel Sauce

- 4 cups half-and-half
- 1/2 vanilla bean, cut and seeds scraped
- Pinch salt
- 3/4 cup sugar
- 8 egg yolks
- 1 tablespoon butter
- 1 tablespoon minced ginger
- 4 ripe peaches, peeled, pitted and roughly chopped, plus slices for garnish
- 1/4 cup raw sugar
- 1/3 cup bourbon (recommended: Southern Comfort)
- Caramel Sauce, recipe follows
- Fresh mint leaves, for garnish
Warm Peach and Prosciutto Salad

- 10 very thin slices prosciutto
- 1 pound peaches (about 3), at room temperature, peeled and cut into 8 wedges
- Salt and freshly ground black pepper
- 1 lemon, juiced
- 2 tablespoons water
