Large Skillet Blanch Green Beans Until Slightly Tender, Remove & Keep Warm
- 1 # Fresh Green Beans Trimmed & Washed
- 2-3 Shallots Minced
- 2 Cloves Garlic Minced
- 6oz Can Sliced Water Chestnuts Drained & Washed
- 1 T Soy Sauce
- 1/2 C Heavy Cream
- 1/2 C Shredded Parmesan Cheese
- 1 C Panko Crispy Bread Crumbs
- Salt & Pepper
- (Optional: Sliced Mushrooms)
Shrimp Brining

- 1 # Shrimp Peeled & Deveined
- 1 qt Water
- 1 T Sea Salt
- Ice
- Favorite Seasoning: Chili, Cajun, Lemon Pepper, etc.

- 1 C mayonnaise
- 1/2 C Chili Sauce

Eggs, Grits & Sausage Bake

- 1 # Neese's Country Sausage
- 3 C Water
- 3/4 C Grits
- 8 oz Sharp Cheddar Cheese Shredded
- 5 oz Can Evaporated Milk
- 1/4 t Garlic Powder
- 2-3 Dashes Texas Pete
- 2 Large Eggs - Lightly Beaten
Smoky Ham and Split Pea Soup

1. Layer peas and next 9 ingredients (through ham) in order listed in a 6-quart electric slow cooker
- 1 pound dried green split peas, rinsed and drained
- 1 1/2 cups cubed peeled Yukon gold potatoes
- 5 garlic cloves, chopped
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped peeled carrot
- 1 large bay leaf
- 1 teaspoon freshly ground black pepper
- 3/4 teaspoon kosher salt
- 2 pounds smoked ham hocks
- 6 cups water
- 1/2 cup light sour cream

- 4 Green Onions Sliced Thin
- 2 Hard Boiled Eggs Sliced
- 1/2 C EVOO
- 2 T White Wine Vinegar
- 2 T Fresh Lemon Juice
- 1/4 t Dry Mustard
- 1/4 t Salt
- Fresh Ground Pepper
Potato & Ham Soup

- 8-10 White Potatoes Washed, Peeled & Cubed Bite Size
- 1 C Baby Carrots
- 2 Stalkes Celery Diced
- 1 Medium Yellow Onion Diced
- 2 Cloves Garlic Minced
- 1 C Warm Water with Chicken Bouillon Desloved
- EVOO
- 2 T Butter
- 2 C Milk
- 1 C Cooked Ham Diced
- 16 oz Package Welch Rarebit Thawed
- Salt & Pepper to Taste
- Garnish: Crumbled Cooked Bacon & Chives
