Blue Cheese Mashed Potatoes w Caramelized Onions and Mushrooms

1. Heat the oil in a pan. 2
- Ingredients:
- 1 pound potatoes (peeled if desired and cut into 1 inch pieces)
- 4 ounces blue cheese (crumbled, room temperature)
- 2 tablespoons butter (room temperature)
- milk to taste (optional)
- 1 tablespoon parsley (chopped, optional)
- Directions:
- 1 . Boil the potatoes until the potatoes are fork tender, about 20-30 minutes.
- 2 . Drain the potatoes and mash.
- 3 . Mix in the blue cheese, butter and milk to taste.
- 4 . Mix in the parsley.

Fresh Corn Soup with Grilled Poblano Chiles

1. Place poblano chiles on a hot grill
- 2 poblano chiles
- 4 cups fresh corn kernels, cut and scraped from 5 to 6 ears of corn, or about two 10-ounce packages frozen corn
- 1 quart (4 cups) milk, divided
- 1/2 cup butter
- 1 onion, diced small
- 32 ounces chicken or vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Bourbon Bread Pudding with Caramel Sauce

Trim crust from bread using a serrated knife, and discard crust
- 1 (8-ounce) loaf unsliced French bread
- 1 cup milk
- 1/4 cup firmly packed brown sugar
- 1/8 cup bourbon
- 1 teaspoon vanilla extract

- 1/3 cup raisins
- Cooking spray
- 1/4 cup caramel sauce, homemade or store-bought
Chipotle Baked Fish

Roast the onions Preheat an oven to 350°F
- 2 yellow onions, halved and sliced
- Salt, to taste
- 2 chipotle chilies in adobo
- 2 tsp. adobo sauce from chilies
- 4 catfish, tilapia or other white-fleshed fish fillets, about 1 1/2 lb. total, pin bones removed
- 2 limes, halved
- 2 to 3 Tbs. chopped fresh cilantro leaves
Pork Loin with Mushroom and Bacon

Preheat oven to 400 F degrees
- 1 lb pork loin
- 4 cups sliced mushrooms
- 1 cup cherry tomatoes, sliced in half
- 1 medium onion, chopped
- 5 slices of bacon, cut up in pieces
- 1/2 cup half and half (cream)
- 1/4 cup vodka (yum)
- salt and pepper to taste
- 1/4 tsp cayenne pepper
- 1/2 tsp cumin

- 4 * 4 whole Russet Potatoes, Scrubbed Clean
- 2 * 2 Tablespoons Butter, Softened
- 1-1/2 * 1-1/2 cup Heavy Cream
- 1/2 * 1/2 cups Whole Milk
- 2 * 2 Tablespoons Flour
- 4 * 4 cloves Garlic, Finely Minced
- 1 * 1 teaspoon Salt
- * Freshly Ground Pepper, to taste
- 1 * 1 cup Sharp Cheddar Cheese, Freshly Grated
Orecchiette with Sausage and Broccoli Rabe

Cook pasta in a large pot of salted, boiling water until al dente; drain and set aside

- 1 pound orecchiette pasta
- 1/2 pound broccoli rabe, washed, ends trimmed

- 1/2 pound hot Italian sausage, crumbled

- 1 red bell pepper, stemmed and seeded, diced
