- 3 flat noodles (dried variety)
- Water for boiling the noodles
- 4 cloves garlic, minced (I used smoked garlic)
- 1/4 pound pork, minced (you can use store-bought ground pork)
- 5 stalks boy choy, chopped thinly
- 3 large shitake mushrooms (dried or fresh), chopped thinly
- 2 red chilli peppers ( sliced)
- Handful of toasted sesame seeds
- 1-2 tsps light soy sauce
- 1 tbsp abalone sauce
- 1 tbsp mirin
- 2 tsp Chinese Rice Wine (Shaoxing Wine)
- Dash of sesame oil
Slow-Cooker Meat Sauce

In a dutch oven or heavy bottomed pot set over medium/high heat, brown sausage and ground chuck
- 2 pounds ground Italian sausage (I used sweet)
- 1 pound ground chuck
- 2 teaspoons extra-virgin olive oil
- 2 onions, diced
- 2 bell peppers, diced
- 6 cloves garlic, minced
- 8 ounces mushrooms, cleaned and sliced
- 3 28-ounce cans crushed tomatoes
- 1 can tomato paste
- 1/2 cup red wine
- 1 parmesan rind
- 1 teaspoon dried thyme (or 2 teaspoons fresh)
- Kosher salt
- Black pepper
- 1/4-1/2 teaspoon crushed red pepper flakes (to your taste)
Crispy Baked Pasta with Mushrooms, Sausage, and Parmesan Cream Sauce

Bring a large pot of salted water to a boil and keep at a bare simmer
- 1 cup Panko-style bread crumbs
- 6 ounces grated Parmesan cheese
- 1/4 cup chopped fresh parsley leaves
- 2 tablespoons finely minced fresh chives
- 2 small shallots, finely minced (about 1/2 cup)
- 2 medium cloves garlic, minced (about 2 teaspoons)
- 2 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 2 tablespoons unsalted butter
- 8 ounces Italian sausage (mild or hot), removed from casings
- 1 pound mixed mushrooms (such as portobello, shiitake, and oyster), cleaned and thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon juice from 1 lemon
- 2 1/2 tablespoons all-purpose flour
- 2 cups homemade or store-bought low-sodium chicken stock
- 1 cup heavy cream
- 12 ounces fresh or 8 ounces dried ridged pasta such as rotini or campanelle

- 1/2 teaspoon dried crushed red pepper
- 1 28-ounce can Italian plum tomatoes, chopped, juices reserved
- 1 10-ounce can baby clams, drained, juices reserved
- 4 tablespoons chopped fresh parsley
- 1 teaspoon dried basil, crumbled
- 1 teaspoon anchovy paste
- 12 ounces large uncooked shrimp, peeled, deveined
- 12 ounces large shell pasta, freshly cooked
Baby Kale, Mozzarella, and Egg Bake

- 5 oz. mixed baby kale or chopped kale leaves (I used Earthbound Farm Ready-to-use Organic Mixed Baby Kales.)
- 1-2 tsp. olive oil (depending on your pan)
- 1 1/2 cup low-fat grated mozzarella cheese (I use a mozzarella blend from Costco with 6 grams of fat in 1/4 cup)
- 1/3 cup thinly sliced green onion
- 8 eggs
- 1 tsp. Spike Seasoning (optional, but good. You can use any seasoning blend that tastes good with eggs instead of Spike.)
