Pork Carnitas Under Pressure

Place the oven rack in the lower middle position and preheat the oven to 300°F
- 3 1/2 - 4 pounds boneless pork butt roast (sometimes called boneless pork shoulder or boneless picnic roast)
- 4 Tablespoons of The Spice House Morita Ground Chipotle Chile Peppers
- 4 - 6 Tablespoons of The Spice House Medium Chili Powder
- salt and pepper
- 2 + cups chicken stock (enough to just about cover the pork in the pot)
- 1 white or yellow onion, peeled and chopped
- 4 - 6 cloves garlic, smashed and peeled
- 4 - 6 canned whole tomatoes
- 2 Tablespoons lime juice (about 1 lime)
- 2 - 3 Tablespoons maple syrup
- For serving: Small corn or flour tortillas, grated cheese (I like Cotija cheese), avocado, sprigs of cilantro, fresh lime wedges, slaw, or salsa
Pasta Primavera

Bring a large pot of water to a boil
- * ¾ lb. linguini
- 2 * 2 tablespoons olive oil
- 1 * 1 bunch (about 1 lb.) asparagus stalks, trimmed, cut into 1-inch pieces
- 2 * 2 garlic cloves, minced
- 1 * 1 lb. large shrimp, peeled and deveined
- * ⅓ cup freshly squeezed lemon juice
- * ½ cup white wine
- 1 * 1 cup freshly chopped flat-leaf parsley
- 1 * 1 pint-size container cherry tomatoes, halved
- * ¼ cup grated Parmesan cheese
- * Salt and freshly ground black pepper

Blueberry BBQ Sauce Recipe

Bring all the ingredients (except the chicken of course) to a low boil in a saucepan
- 2 cp. fresh blueberries
- 1/4 cp. balsamic vinegar
- 3 tbsp honey
- 3 tbsp ketchup
- 1/2 tsp garlic powder
- 1/2 tsp ginger powde
Bacon Lover's Mac & Cheese

1. Preheat the oven to 400 degrees and bring a large pot of salted water to boil
- 12 oz. short pasta
- 5-6 oz. bacon, chopped
- 8 oz. baby bella mushrooms, sliced
- 2 tbsp. unsalted butter
- 1/4 cup flour
- 2 cloves garlic, minced
- 2 1/2 cups milk
- 1/4 tsp. salt
- 1/4 tsp. red pepper flakes
- Freshly ground black pepper, to taste
- 4 oz. Fontina cheese, grated
- 4 oz. white cheddar cheese, grated
- 3 cups fresh baby spinach leaves, chopped
Baked Penne with Corn, Zucchini and Basil

Preheat an oven to 400ºF
- Kosher salt, to taste
- 1/2 lb. penne
- 6 Tbs. olive oil, plus more as needed
- Kernels cut from 2 ears of corn
- Freshly ground black pepper, to taste
- 8 zucchini, about 2 lb. total, cut into half-moons
- 1/2 yellow onion, diced
- 4 tomatoes, cored, seeded and cut into 1-inch chunks
- 1 Tbs. sliced garlic
- 1 tsp. chopped fresh oregano
- 1/4 tsp. red pepper flakes
- 1 Tbs. tomato paste
- 1/4 cup white wine
- 1/2 cup thinly sliced fresh basil
- 6 oz. mozzarella cheese, grated
- 2 oz. Parmigiano-Reggiano cheese, grated
