Lightly brush a 9-inch springform pan with vegetable oil
- Vegetable oil, for brushing
- 9 whole graham crackers, crushed
- 1/4 cup light brown sugar
- 1/4 teaspoon cinnamon
- 4 tablespoons unsalted butter, melted
- 10 ounces fresh goat cheese, softened
- 2 teaspoons fresh lemon juice
- 1 1/2 cups heavy cream
- 1/3 cup plus 1/4 cup granulated sugar
- Julienned zest from 2 navel oranges
- 1 teaspoon Champagne vinegar
- 1/2 cup honey, preferably wildflower
- 1 cup cranberries (4 ounces)
Stir-Fried Red Rice with Sliced Sirloin Steak and Peas

In a small saucepan, cover the rice with the water and bring to a boil
- 1/2 cup red rice (see Note)
- 1 cup water
- 3 tablespoons vegetable oil

In a large bowl, combine the zucchini, corn, onion, jalapeos, beans, salt, pepper, and chili powder
- 1 small zucchini, grated and drained on paper towels (about 1 cup)
- 1 cup defrosted frozen corn, drained on paper towels
- 1 small red onion, chopped
- 2 jalapeo peppers, seeds and ribs removed, chopped
- 1 2/3 cups drained and rinsed canned black beans (one 15-ounce can)

Preheat oven to 400˚. Spread 1 TBS olive oil on the bottom of a gratin dish about 8 x 10 inches in size
- 1/4 cup plus 1 TBS olive oil
- 1/2 loaf chewy Italian-style bread, fresh or day old, sliced 1/4 inch thick
- 3 cloves garlic, finely chopped
- Small bunch fresh basil
- 3 ripe juicy tomatoes (1 – 1 1/4 lbs), sliced 3/8 inch thick
