Ricotta with Honey & Fruit

This is a refreshing dish to have at a party or barbecue
- 3/4 lb ricotta
- 1/4 c heavy cream
- 1 tsp vanilla extract
- Fresh fruit combination: 1 pint strawberries, hulled and halved; 3 ripe plums, nectarines, pitted and cut into small slices; 1 pint fresh figs, stemmed and halved
- 1/4 to 1/2 c honey
- coarse black pepper
- mint sprigs, garnish
Chicken with Sun-Dried Tomatoes

This recipe is a nice hearty supper for the family
- 4 boneless skinless chicken breasts
- 1 tbs evoo
- 4 cloves garlic, minced
- 1/4 c drained sun dried tomatoes, coarsely sliced
- 1/8 tsp red pepper flakes
- 1/4 c dry white wine
- 3/4 c chicken broth
- 1/4 c heavy cream
- 1/4 c thinly sliced basil
Strawberry & Ricotta on Graham Crackers

This dish is inspired by a recipe from Food and Wine magazine
- 1 sleeve of graham crackers, divided
- 1 package strawberries, sliced
- 1/3 c sugar
- 1 1/2 tbs lemon juice
- 10 oz ricotta
- 2 tbs confectioners' sugar
- 1 tsp lemon zest
Strawberry-Almond Scones

- Scones:
- 1 1/2 c all purpose flour
- 1 1/2 c whole wheat "pastry" flour (less dense that whole wheat flour)
- 1/4 c + 2 tbs sugar
- 1 tbs baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 stick cold butter, cubed
- 1 1/4 c buttermilk, plus more for brushing
- 1 1/2 c sliced strawberries
- 2 tbs turbinado sugar (Sugar in the Raw)
- Topping:
- 1/2 c sliced almonds
- 2 c confectioners'sugar
- 3 tbs buttermilk
- 1/2 tsp almond extract
- salt-pinch

- sea salt
- 1/4 c evoo (extra virgin olive oil)
- 1/4 lb large diced pancetta
- 2 cups chopped vidalia onions (yellow), roughly 2 onions
- 1 cup chopped baby carrots, more is fine
- 1 cup chopped celery, roughly 3 stalks
- 3 tablespoons minced garlic, roughly 6 cloves
- 1 tsp coarse ground black pepper
- 1/4 tsp crushed red pepper flakes, more is fine 1 28oz italian plum tomatoes in puree, chopped
- 1 14 oz can diced tomatoes
- 4 cups coarsely chopped savoy cabbage, 1 head
- 4 cups baby kale, or coarsely chopped kale
- 1/2 cup chopped fresh basil
- 2 18 oz cans Great Northern Beans
- 2 18 oz cans Cannellini Beans
- 8 cups chicken stock
- 4 cups sourdough bread, day old is best and cubed when ready to use
- 1/2 cup freshly grated parmesan cheese

Wonderfully Light Eggnog

My son, Gary, made this eggnog over the holidays
- 2 cups 2 percent milk
- 1 cup heavy cream, whipped
- Pinch of salt
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 allspice
- 1 tbs vanilla extract
- 4 egg yolks
- 1/3 cup honey

- 2 15 oz cans black-eyed peas
- 1/2 large green bell pepper
- 1/2 cup sweet onion
- 4 strips of bacon
- 1 15 oz can diced tomatoes
- 1 small jalapeno pepper
- 1 8 oz can tomato sauce
- 1/2 cup water (approx.)
- 1 clove garlic-minced
