Low-Maintenance Risotto

Here's a Busy Cook-friendly version of a classic
- 3 tablespoons unsalted butter
- 1 medium onion, finely chopped
- kosher salt and black pepper
- 1 cup Arborio rice
- 1/2 cup dry white wine
- 3-1/2 cups low-sodium chicken broth, plus more if needed
- 1/2 cup grated Parmesan (2 ounces), plus more for serving
- 2 tablespoons chopped fresh flat-leaf parsley
Italian Ziti with Sausage

"Rather than hunting down high quality Italian sausages, paying top dollar then squeezing the meat out of the casin...
- 300 g (10.58 oz) ziti or penne pasta
- 1 Tablespoon olive oil
- 3 garlic cloves
- 1 onion (brown, white or yellow), finely chopped
- 1 lb/500g (17.64 oz) ground pork (mince) OR Italian Sausages removed from casings
- 1.4 lb / 700g (24.69 oz) pureed tomato
- 1/2 cup water
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp sugar (any type)
- Salt and pepper
- 3/4 cup grated mozzarella cheese
- SAUSAGE SEASONING (not req'd if using store bought Italian sausages) (Note 4)
- 2 tsp fennel seeds
- 1 Tablespoon paprika (any type - all go great with this)
- 3 tsp red pepper flakes OR 2 tsp cayenne pepper (adjust to taste)
- 2 tsp onion powder
- 1 tsp black pepper
- 1 tsp salt (table salt)
Baked Onion Chicken

Preheat an oven to 400 degrees F (200 degrees C)
- 1 cup sour cream
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 4 skinless, boneless chicken breast halves
- 1 cup crushed cornflakes cereal
- 1 (1 ounce) package dry onion soup mix
- 3 tablespoons butter, melted
Mac & Cheese - Cook's Country

This is now my family's favorite version, by far, of this classic dish
- Salt and pepper
- 1 pound elbow macaroni (see note)
- 1 (28-ounce) can petite diced tomatoes
- 6 tablespoons unsalted butter
- 1/2 cup all-purpose flour
- 1/4 teaspoon cayenne pepper
- 4 cups half-and-half
- 1 cup low-sodium chicken broth
- 8 oz (3 cups) shredded mild cheddar cheese
- 8 oz (3 cups) shredded sharp cheddar cheese
- Panko bread crumbs for topping.
Orange-Ginger Glazed Ham

- 1 (7 to 8 pound) bone-in shank end smoked ham half
- 1 jar (12 ounces) orange marmalade

- 4 4 4 cups half-inch cubes butternut squash
- 1 1 1 lb. baby spinach
- 1/2 1/2 1/2 tsp. kosher salt
French-Style Cream Cheese Spread

This is more than worth the small bit of time it takes to throw this together
- 1 (8-ounce) package cream cheese, softened
- 1/4 cup margarine or butter, softened
- 1 clove garlic, minced
- 1 tablespoon snipped fresh parsley
- 1 tablespoon water
- 2 teaspoons white wine vinegar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon herbes de Provence, crushed
- 1/4 teaspoon seasoned salt
- Fresh thyme, optional
- Assorted crackers
Bloody Mary Cocktail

Combine all of the above in a container with a sealable lid and shake well
- 1 bottle (48 oz) of Tomato or Vegetable Juice (I use Spicy Hot V-8)
- Juice and zest of 1 lemon
- Juice and zest of 1 lime
- 2 tablespoons of prepared horseradish like Gold's (more or less to taste)
- 13 dashes Tabasco (more or less to taste)
- 2 oz Worcestershire sauce
- 1 teaspoon celery salt
- 1 teaspoon fresh ground black pepper (more or less to taste)
- Vodka
- Various garnishes such as: celery stalks, lemon and lime wedges, olives, pickled spicy beans, pickled asparagus, hot peppers, fresh cilantro, etc.
