Mexican Fiesta Casserole

1. Preheat the oven to 350°F
- 2 teaspoons canola oil
- 1/2 pound lean ground turkey
- 1 cup finely chopped onions
- 1 cup finely chopped zucchini (or yellow squash, peas, or green beans)
- 1 envelope (1-1/4 ounces) low-sodium taco seasoning (MUCH better, use 2 Tblsp plus 1-1/2 teaspoons of my Real Deal Taco Seasoning Mix--no salt and very flavorful!))
- 2/3 cup frozen corn kernels
- 1 cup canned black beans, rinsed and drained
- 2 cups jarred salsa (or make my Chipotle Salsa with Roasted Tomatillos!)
- 8 (6-inch) corn tortillas
- 1-1/2 cups shredded Mexican cheese blend
- 1/4 cup sliced scallions (white and light green parts only)
- 1/2 cup fat-free or low-fat sour cream, for serving
Spinach Dip-Stuffed Mushrooms Recipe

Remove stems from mushrooms and set caps aside; discard stems or save for another use
- 16 large fresh mushrooms
- 2 cups fresh baby spinach, coarsely chopped
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1/2 cup reduced-fat sour cream
- 3 ounces reduced-fat cream cheese
- 1/3 cup shredded part-skim mozzarella cheese
- 3 tablespoons grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon pepper

This recipe uses no egg yolks, unlike many truffle recipes, so we don't need to be concerned about uncooked eggs
- 10-ounces 10-ounces 60% high quality, bittersweet chocolate (I use Cook's Illustrated's top rated Ghirardelli 60% Cacao Bittersweet Chocolate Chips)
- 3 3 3 tablespoons unsalted butter (no substitutes)
- 1/2 1/2 1/2 cup heavy cream
- 1 1 1 tablespoon light corn syrup
- 1/4 1/4 1 cup Amaretto, use good quality here (I use about 1 Tblsp. less, because I don't want too much competition with the chocolate flavor); for a nonalcholic option, replace with espresso.

- 4 tablespoons (1/2 stick) unsalted butter plus more for baking dish
- Coarse salt and freshly ground pepper
- 3 cups elbow macaroni

- 1 small green bell pepper, diced
- 1/2 large onion, diced
- 1 stalk celery, diced, plus a handful of celery leaves
