Pumpkin Soup: Spicy Pumpkin Soup

So good! Warm, slightly spicy with just a touch of sweet
- 4 Tbsp unsalted butter
- 2 medium yellow onions, chopped
- 2 teaspoons minced garlic
- 1/8 to 1/4 teaspoon crushed red pepper
- 2 teaspoons curry powder
- 1/2 teaspoon ground coriander
- Pinch ground cayenne pepper (optional)
- 3 (15 oz) cans 100 percent pumpkin or 6 cups of chopped roasted pumpkin*
- 5 cups of chicken broth, vegetable broth, or water
- 2 cups of milk or soy milk
- 1/2 cup brown sugar
Coconut Ice Cream

Bring milk, heavy cream, coconut milk, and coconut flakes to simmer in heavy saucepan for a few minutes
- 2 cups milk
- 2 cups heavy cream
- 2 cups coconut milk
- 1 cup coconut flakes toasted
- 8 egg yolks
- 1 1/2 cups sugar
- 1 pinch salt

Potato Leek Soup

Make a bouquet garni: First wrap bay leaves, rosemary, parsley, and peppercorns in a piece of cheesecloth
- 2 dried bay leaves
- 6 sprigs fresh rosemary, or 2 teaspoons crushed dried rosemary
- 4 sprigs fresh flat-leaf parsley
- 1 teaspoon whole black peppercorns
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 stalks celery, cut into 1/4-inch dice
- 6 leeks, white parts only, washed well, thinly sliced
- 4 shallots, diced
- 6 cloves garlic, minced
- 2 1/2 pounds Yukon gold potatoes, peeled and cut into 1-inch pieces
- 8 cups Homemade Chicken Stock Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
- 1 cup milk
- 1/2 cup heavy cream
- Salt and freshly ground black pepper

EASY HOMEMADE HUMMUS

- 2 tablespoons dried currants
- 1 small McIntosh apple cut into 1/8-inch-thick wedges
- 1/4 cup loosely packed fresh mint leaves coarsely chopped, plus more for garnish
Spagetti Puttanesca

In a large pot heat the olive oil over medium high heat
- 1/4 cup olive oil
- 1 cup finely chopped onion
- 6 cloves minced garlic
- 2 (28-ounce) cans Roma plum tomatoes, broken into pieces, with juice
- 1 cup tightly packed, pitted, and halved Kalamata olives
- 2 tablespoons tomato paste
- 2 tablespoons drained capers
- 2 tablespoons minced anchovy fillets (about 8 fillets)
- 1/2 teaspoon dried crushed basil
- 1/2 teaspoon dried crushed red pepper flakes
- Salt
- 1 pound penne pasta, cooked to al dente
Rustic Garlic Bread
