Winter Vegetable Soup with Smoked Trout

Combine vegetables, chicken broth, bay leaf, and nutmeg in a medium saucepan and season with salt and pepper
- 1/2 small celery root, peeled and sliced (1 cup)
- 2 medium parsnips, peeled and sliced (2 cups)
- 1/2 small rutabaga, peeled and sliced (1 cup)
- 1 quart chicken broth
- 1 bay leaf
- 1/4 teaspoon freshly ground nutmeg, plus more for garnish
- Kosher salt and freshly ground black pepper
- 1/3 cup sour cream
- 1 teaspoon lemon juice
- 4 ounces smoked trout, pulled apart into pieces
- Toasted and buttered country bread slices, for serving
Red Quinoa Salad with Spicy Lime Vinaigrette

This is one of the best quinoa salads I've ever made
- 1 shallot, finely chopped
- 1 clove garlic, finely chopped
- 1 small jalapeño, seeded and finely chopped
- Zest of 1/2 lime
- Juice of 2 limes
- 1 teaspoon lemon juice
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons olive oil
- 2 tablespoons canola oil
- Salt and pepper, to taste
- 1/2 cup pumpkin seeds
- 1/2 teaspoon olive oil
- 1 teaspoon smoked paprika
- 1 1/2 pounds peeled, seeded butternut squash cut into 1-inch cubes
- 1 tablespoon canola oil
- 1 cup red quinoa
- 2 cups water
- 15 ounces white beans or 1 can, drained
- 1/4 cup cilantro leaves, roughly chopped
Sole Meuniere

Heat a large saute pan to a medium setting
- 1/3 c. all purpose flour
- kosher salt and fresh ground pepper
- 4 sole fillets, 4 - 5 oz. each
- 6 T. unsalted butter
- 1 tsp. grated lemon zest
- juice from 2 large lemons (about 4 T - 5 T. lemon juice)
- 1 T fresh minced parsley
Penne with Chicken Marengo

1. Bring a large pot of water to a boil
- 8 ounces penne
- 1/2 cup dry-packed sun-dried tomatoes
- 1/2 pound boneless, skinless chicken breasts, cut into 1/2" cubes
- 1 tablespoon all-purpose flour
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground black pepper
- 1 tablespoon olive oil
- 3 cups sliced mushrooms
- 1/2 cup chicken broth
- 1 can (15 ounces) crushed tomatoes in puree
- 1/2 cup orange juice
- 1 teaspoon grated orange zest
- 1 teaspoon brown sugar
- 1/8 teaspoon salt
