Lemon Poppy Seed Muffins

big yummy muffins. not too sweet, just the right amount of tart
- 3 cups of all-purpose flour
- 1 Tbsp baking powder (make sure your baking powder is no older than 6 months)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 Tbsp poppy seeds
- 10 Tbsp unsalted butter (1 1/4 stick), softened
- 1 cup sugar
- 2 large eggs
- 1 1/2 cup plain yogurt
- 1 Tbsp lemon zest
- Glaze
- 2 Tbsp fresh lemon juice
- 1 cup confectioner's sugar (powdered sugar)

- 2 medium potatoes(the size of an average persons fist)
- 1 1/2 cups water
- 1 1/2 tbs butter or margarine
- 2 cups chopped onion
- 1 small stalk celery, minced
- 1 1/2 lbs mushrooms
- 1 1/2 to 2 tsp salt
- 1 to 2 small colves garlic, minced
- 1/4 tsp thyme
- 3 tbs dry sherry
- 2 tsp soy sauce
- Fresh black pepper to taste
- 1 cup milk (can be lowfat)

Tortilla Soup with Chicken

Saute garlic, onion in oil dump everything else in simmer 1 hour, pull out chicken, shred it and return to soup
- 2 tbs oil
- 1 can tomato soup
- 1 chopped onion
- 1 1/2 cups water
- 2 cloves garlic
- 1 tsp each sugar
- Chili powder
- Cumin powder
- 2-4 chicken breasts
- 1/2 tsp pepper
- 2 cans diced tomatoes
- 2 tsp worcestershire sauce
- 1 can rotel tomatoes(diced)
- 1 tsp tabasco sauce
- 1 can beef broth
- 1-2 tbs fresh chopped cilantro(optional)
- 1 can chicken broth
- Juice of 1/2 lime or lemon
Sautéed Broccoli Rabe with Garlic and Chiles (Rape Fritte)

1. Trim broccoli rabe, removing tough parts of stems and any stems with a hollow core
- 3 pounds whole broccoli rabe
- 1/3 cup extra-virgin olive oil
- 8 garlic cloves, peeled and halved lengthwise, if large
- 2 small dried hot red chiles, such as peperoncini, Thai, or Chinese, torn in half
- 1/2 About 1/2 tsp. kosher salt
Holiday Sweet Potatoes

Mash first 4 ingredients together and put in buttered casserole dish(over)
- 4 big sweet potatoes
- Boil skin and mash
- 1/4 c milk
- 1/3 still butter
- 2 T sugar
- 1/3 c coconut
- 2 T butter
- 1/3 c brown sugar
- 2 t flour
- Chopped pecans
