Thai Beef Lettuce Wraps

1. Heat the grill or grill pan over high heat for at least 5 minutes
- 12 oz flank, skirt, or sirloin steak
- 1 tbsp chili sauce (we like sriracha)
- 1 jalapeno pepper, thinly sliced
- 2 tbsp fish sauce
- 1/2 red onion, thinly sliced
- Salt and pepper to taste
- 2 limes, cut into wedges
- 1/2 cup chopped fresh cilantro
- 1 carrot, peeled and grated
- 1 head Bibb lettuce, washed and dried, leaves separated
Indian Guacamole

- 2 ripe large avocados, halved and pitted
- 1 tablespoon lemon juice
- 1/2 to 1 tsp. minced Thai or serrano chile
- 1/2 teaspoon kosher salt
- 1/2 teaspoon minced garlic
- 1 tablespoon vegetable oil
- 2 teaspoons brown mustard seeds
- 3/4 teaspoon cumin seeds, coarsely ground with a mortar and pestle or spice mill
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1 tablespoon chopped cilantro
- Pappadums* or tortilla chips

1. Bring a large pot of well-salted water to a boil over high heat
- 1 * 1 bunch (1 lb.) green Swiss chard
- 1/2 * 1/2 medium head radicchio
- 1 * 1 medium lemon
- 2 * 2 tablespoons olive oil
- 3 * 3 large garlic cloves, thinly sliced
- 1/2 * 1/2 cup reduced-sodium chicken broth
- 1/3 * 1/3 cup dry sherry
- 1/3 * 1/3 cup heavy cream
- 1 * 1 cup freshly shredded asiago cheese, divided
- 3 * 3 cups shredded white and dark chicken meat (from one 2 1/2- to 3-lb. rotisserie chicken)

- 3 * 3 cups jasmine rice
- 1/2 * 1/2 teaspoon salt
