Swedish Meatballs

Preheat oven to 200 degrees F
- 2 slices fresh white bread
- 1/4 cup milk
- 3 tablespoons clarified butter, divided
- 1/2 cup finely chopped onion
- A pinch plus 1 teaspoon kosher salt
- 3/4 pound ground chuck
- 3/4 pound ground pork
- 2 large egg yolks
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground allspice
- 1/4 teaspoon freshly grated nutmeg
- 1/4 cup all-purpose flour
- 3 cups beef broth
- 1/4 cup heavy cream
Pineapple Chicken Tenders

1. In a small saucepan over medium heat, mix pineapple juice, brown sugar & soy sauce
- 1 c. unsweetened pineapple juice
- 1/2 c. packed brown sugar
- 1/3 c. light soy sauce
- 2 pounds chicken breast tenders, raw
- Prep time: 30 minutes
- Cook time: 10 minutes
- Total time: 70 minutes

Pizza Sauce

Drain tomatoes (this will give you a nice, thick sauce)
- 1 quart of home canned tomatoes or 1 - 28 ounce can of tomatoes
- 1 small onion
- 3 T. tomato paste
- 2 T. sugar
- 1/2 t. salt (or to taste)
- 1/4 t. paprika
- 1/2 t. oregano
- 1/4 t. chili powder
- 1/4 t. garlic powder
- 1/4 t. onion powder
- 1 t. minced garlic
- 1/4 t. basil

Preheat oven to 375º F (190º C)
- 1 (8 oz.) can refrigerated crescent roll dough
- 2 c. shredded mozzarella cheese
- 24 slices sliced pepperoni sausage
- 1 (14 oz.) can pizza sauce
Slow Cooker Sunday – Beef Stew

Heat the olive oil in a large skillet over medium-high heat and then lightly brown the meat in batches
- 2 lbs of stewing beef, trimmed and cut into 1 inch cubes
- 1 tablespoon olive oil
- 2 medium sized onions, chopped into large pieces
- 2 ribs celery, chopped
- 4 carrots, chopped
- 20 about 20 mini-potatoes, cut large ones in half, leave smallest ones as is (I like to use a mix of yellow, red and blue, no need to peel)
- 1 28 oz. can whole tomatoes (I use plum tomatoes)
- 1 1/2 teaspoons Italian seasoning
- 3 cups sodium reduced beef broth, divided
- 2 bay leaves
- 1 cup frozen peas
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cups all-purpose flour
Pizza Rolls

Roll out crescent rolls so they are as big as you can get them
- 1 can of refrigerated crescent rolls
- 1 8oz pkg. shredded mozzeralla cheese, or sliced whichever you prefer
- Pizza toppings of your choice (pepperoni, hamburger, canadian bacon, etc)

- 1 1/2 c Butter (softened)
- 4 oz Cream Cheese (softened)
- 4 1/2 c Powdered Sugar (plus a little more)
- 3 T Heavy Cream
- 1 1/2 t Vanilla extract (clear if desired or almond extract can be used)

Almond-Bacon Cheese Crostini

- 1 French bread baguette (1 pound), cut into 36 slices
- 2 cups (8 ounces) shredded Monterey Jack cheese
