Chicken Enchiladas

- 3 tablespoons vegetable oil
- 1 1/2 pounds skinless boneless chicken breast
- Salt and pepper
- 2 teaspoons cumin powder
- 2 teaspoons garlic powder
- 1 teaspoon Mexican Spice Blend
- 1 red onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen corn, thawed
- 5 canned whole green chiles, seeded and coarsely chopped
- 4 canned chipotle chiles, seeded and minced
- 1 (28-ounce) can stewed tomatoes
- 1/2 teaspoon all-purpose flour
- 16 corn tortillas
- 1 1/2 cups enchilada sauce, canned
- 1 cup shredded Cheddar and Jack cheeses
- Garnish: chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes

Hard Boiled Eggs

*Remove cover & carefully drain
- *Pierce raw eggs with needle prior to boiling to prevent cracks.
- *Put raw whole eggs in pot with a tightly fitting cover (doesn’t matter how many eggs).
- *Cover eggs with cool or lukewarm tap water, covering eggs by at least an inch.
- *Bring to rolling boil over high heat.
- *Immediately when eggs reach full, rolling boil, remove pot from heat.
- *Cover immediately & allow eggs to continue to cook in hot water for 18 min.
Caramel Frosting

Set a small saucepan over low heat and add 1/4 cup of the milk
- 1 cup whole milk
- 3/4 ounce (4 1/2 teaspoons) instant yeast
- 1/4 cup sugar, plus more for coating
- 3 tablespoons unsalted butter, room temperature
- 1 1/2 teaspoons salt
- 1/4 teaspoon mace
- 2 tablespoons nonfat powdered milk
- 1 large egg
- 2 cups all-purpose flour
- 1 cup bread flour
- Oil, for coating bowl
- Vegetable shortening, for frying
- 1 1/2 cups raspberry, strawberry, blueberry or your favorite jelly for filling doughnut

•In a large bowl, combine flour, sugar, baking soda, baking powder, and salt; mix well
- 2 2/3 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 2 cups milk
- 1/2 teaspoon vanilla extract
- Oil for frying
- Confectioners' sugar for sprinkling
Apple Pie Bars

1. In a medium-sized bowl, stir together the flour and salt
- Crust:
- 2 1/2 cups flour
- 1/4 tsp salt
- 1 cup butter
- 1 egg
- Milk (about 2/3 cup)
- Filling:
- 1 3/4 cups cornflakes
- 8 cups peeled and sliced cooking apples
- 1 cup sugar
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- Topping:
- 2 Tbls sugar
- 1/2 tsp cinnamon
- 1 cup confectioners' sugar
- 2 Tbls milk
- 1/2 tsp vanilla extract
Meat Balls

Mix first 9 ingredients together & roll into small balls
- Sauce:
- 2 lbs. lean hamburger
- 1 c. crushed corn flakes
- Parsley
- 2 eggs
- 2 T. soy sauce
- 1/2 tsp. pepper
- 1/2 tsp. garlic salt
- 1/3 c. Heinz Ketchup
- 2 T. onion soup mix
- 1 can jellied cranberries 2 T. brown sugar
- 1 (12 oz) bottle ketchup
- 1 T. lemon juice
Barbequed Pork Tenderloin

Rub tenderloins with oil and season with Rathbun Family Barbeque Rub
- RATHBUN FAMILY BARBEQUE RUB:
- 8 pork tenderloins - (8 oz ea)
- 3 ounces olive oil
- 3 ounces Rathbun Family Rub (see below)
- 2 ounces granulated garlic
- 2 ounces granulated onion
- 1 ounce cayenne pepper
- 1/2 ounce white pepper
- 1 ounce black pepper
- 4 ounces salt
- 4 ounces paprika
- 3 ounces brown sugar
