Savory White and Sweet Potatoes

Preheat oven to 350 degrees
- yields 10 servings
- • 3 baking potatoes, peeled and cubed (russet or Yukon Gold)
- • 3 sweet potatoes, peeled and cubed
- • 6 cloves garlic, minced
- • 1/4 cup unsalted butter
- • 2 tsp. olive oil
- • 1/2 cup skim milk
- • kosher salt and pepper
- • 1/2 cup shredded Monterey Jack cheese or ½ cup parmesan
Slow Cooker Potato Leek Soup

Put all ingredients in slow cooker and set for 6-8 hours on low (until potatoes are tender
- Serves 6
- 2 medium uncooked carrots, peeled and sliced
- 2 medium uncooked onions, peeled and chopped
- 4 large uncooked leeks, white & pale green parts only,quartered lengthwise and cut into 1/4-inch slices
- 7 cup fat free chicken broth
- 4 medium uncooked Yukon gold potatoes, peeled and diced into 1/4 inch pieces.
- 1 tsp table salt, to taste
- 1 tsp black pepper, to taste
- 1/2 cup fat-free half-and-half
- 1 Bay Leave
Cauliflower Risotto

Preheat the oil in a large, high-sided sauté pan over medium heat
- 1/4 cup extra-virgin olive oil (plus more)
- 1 head cauliflower (grated or cut into 1/4" pieces)
- 1 cup onion (diced)
- 2 cloves garlic (chopped)
- 1/4 cup dry white wine
- 1/2 cup chicken stock (plus more as necessary)
- 1/4 cup heavy cream
- 2 teaspoons lemon zest
- 1/4 cup toasted pine nuts
- 1/4 cup freshly grated Parmigiano-Reggiano
- 2 tablespoons parsley (chopped)
Funeral Potatoes Recipe

Pre heat oven to 350 degrees Mix all ingredients together Pour into 9x13 greased pan (use spray) Baked uncovered
- Serves 12
- 2 (10 3/4 ounce) cans potato soup or 1 can potato and 1 cream of celery soup
- 1 cup onion, chopped
- 1/2 tsp garlic salt
- 1/2 cup fat free greek yogurt
- 1/2 cup fat free cottage cheese
- 1 pkg (#2) frozen hash browns
- 2 cups shredded cheddar cheese (I used 1 cup fat free and 1 cup light)
- 1/3 cup grated parmesan
Greek Salad

1. Place the tomatoes in a salad bowl that has been rubbed with the cut garlic

- 1 cucumber(s), diced seedless
- 3 scallion(s) (green onions), sliced
- 16 olives, green, pitted, rinsed

Mexican Lasagna Lite

Preheat the oven to 375 degrees F (190 degrees C)
- 1 pound 99%-lean ground turkey
- 1 envelope taco seasoning mix
- 3/4 cup water
- 12 corn tortillas
- 1 (4 ounce) can chopped green chiles, drained
- 2 (10 ounce) cans enchilada sauce, divided
- 1 (8 ounce) carton nonfat sour cream, divided
- 1 (16 ounce) can nonfat spicy refried beans, divided
- 1 (8 ounce) package shredded low-fat Mexican cheese blend, divided
Slow Cooker Olive Garden Zuppa Toscana

Instructions Place all ingredients except for kale and heavy cream into a large slow cooker
- 32 oz low-sodium chicken stock or broth
- 3 cups water
- 24 oz spicy Italian sausage, cooked and crumbled
- 8 slices of bacon, cooked and crumbled (I bake my bacon)
- 5 medium russet potatoes, 1/8-1/4 inch slices
- 1/2 large onion, diced
- 2-3 cloves of garlic, minced
- 2 tsp red pepper flakes (optional)
- Salt and pepper
- 2 c kale, chopped
- 1 c heavy whipping cream
Not Fried, Fried Ice Cream

Directions Make 8 vanilla ice cream balls and freeze on wax-lined cookie sheet for about an hour
- 1 ⁄2 quart vanilla ice cream
- 2 1⁄2 cups corn flakes cereal, crushed
- 1 tablespoon butter
- 2 tablespoons sugar (or 2 TBS splenda)
- 1 teaspoon cinnamon
Salmon Panzanella

Preheat grill to high. Whisk olives, vinegar, capers and 1/8 teaspoon pepper in a large bowl
- 8 Kalamata olives, pitted and chopped
- 3 tablespoons red-wine vinegar
- 1 tablespoon capers, rinsed and chopped
- 1/4 teaspoon freshly ground pepper, divided
- 3 tablespoons extra-virgin olive oil
- 2 thick slices day-old whole-grain bread, cut into 1-inch cubes (see Tip)
- 2 large tomatoes, cut into 1-inch pieces
- 1 medium cucumber, peeled (if desired), seeded and cut into 1-inch pieces
- 1/4 cup thinly sliced red onion
- 1/4 cup thinly sliced fresh basil
- 1 pound center-cut salmon, skinned (see Tip) and cut into 4 portions
- 1/2 teaspoon kosher salt
