Directions Saute onions and celery in butter
- 2 medium onions, minced
- 2 -3 stalks celery, chopped fine
- 2 tablespoons butter
- 1 ⁄2 teaspoon poultry seasoning (I use Bell's)
- 2 cups chicken broth or 2 cups turkey broth or 2 cups vegetable broth
- hot water
- 2 (6 ounce) packagesstove top-style seasoned stuffing mix

Preheat oven to 450 degrees F (230 degrees C)
- 8 oz halibut fillets or cod
- 6 scallops
- 6 peeled and deveined jumbo shrimp, tail still attached
- 1/3 cup dry white wine
- 2 tablespoons melted butter
- 1 tablespoon lemon juice
- 1/2 teaspoon seafood seasoning, such as Old Bay(TM)
- 1 teaspoon minced garlic
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley
No-Guilt Fish and Chips

- 2 large potato(es), baking potatoes, scrubbed and cut lengthwise into 16 spears each

- 4 6-ounce skinless firm white fish fillets (such as halibut, striped bass, or tilapia)
- 2 teaspoons canola oil
- 2 teaspoons Cajun or blackening seasoning
- 4 slices bacon
- 4 scallions, thinly sliced, white and green parts separated
- 2 cups corn kernels (from 2 ears)
- 1/2 small head Savoy cabbage, cut into 1-inch strips (4 cups)

- 2 tablespoons cider vinegar

- 3 - 4 medium zucchini, spiralized or shaved
- 2 garlic cloves, minced
- 1/2 teaspoon kosher salt

Instructions If the corn is super fresh, cut off the cob and add to a serving bowl
- 3 large ears of corn, shucked or use boiled, diced potatoes if corn is unavailable

Instructions Heat a large pot over medium heat
- 4 tablespoons butter
- 1 medium onion, chopped
- 1 clove of garlic, grated or finely minced
- 1/4 cup all purpose flour
- 32 ounces (4 cups) chicken stock
- (2) 28 ounce cans whole tomatoes in juice
- 10 basil leaves (about 1/4 cup), chopped
- 1 cup heavy cream
- 8 ounces (about 2 cups) grated parmesan cheese
- salt and pepper
