Pumpkin Bread

1. Mix sugar, oil, & eggs together 2
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 1 lb canned pumpkin
- 3 1/2 cups flour
- 2 tsp baking soda
- 2 tsp salt
- 1/2 tsp ground cloves
- 1/2 cup chopped walnuts
- 1 tsp EACH of cinnamon, allspice, nutmeg
- 2/3 cup water
Spinach (Hot) & Artichoke Dip

1. Place spinach, basil, & cheese in large ziplog bag 2
- 1 can (5 oz) evaporated milk
- 1 Tblsp cornstarch
- 1/4 Tsp salt
- 1 jar Quartered and marinated artichoke
- hearts,chopped (like Cento's)
- 2 cps spinach (can be canned)
- 2 - 3 Tblsp basil
- 3/4 cp Parmesan and Romano cheese blend
Oatmeal Cookies

Preheat oven to 350 degrees 1
- 3/4 cup shortening
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 1 egg
- 1/4 cup water
- 1 tsp vanilla
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp soda (baking soda)
- 1/4 tsp cloves
- 1 cup raisins
- 1 cup chopped nuts
- 3 cups quick cooking oats
Pot Roast

1. Stir the soup, onion soup mix, potatoes, & carrots into the crock pot 2
- 1 can Cream of Mushroom soup
- 1 pouch dry onion soup
- 6 small red potatoes cut in half
- 6 medium carrots, cut in small round slices
- 3 - 3/12 pound boneless beef bottom round roast
SHRIMP & ZUCCHINI STIR FRY

1. In skillet, heat 1 tblsp oil on medium high until hot
- 4 CUPS Frozen cooked brown rice
- 2 Tbsp Canola Oil
- 1 lb 26 to 30 count med shelled and deveined shrimp
- 2 Tbsp Maple syrup
- 1 lb Zucchini, thinly sliced and halved
- 2 tsp Lower sodium soy sauce
- 1 bunch bunch green onions trimmed & thinly sliced
- 1 tsp Ground ginger
Turkey Burger

Combine all ingredients in a bowl
- 1 lb ground turkey
- 1 tblsp smoky barbecue sauce
- 1 tsp Worcestershire sauce
Banana Bread

1. Stir together flour, baking powder, soda, and salt 2
- 2 cps al purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cps mashed fully ripe bananas
- 1 1/2 cps Bran Buds
- 1/2 cp margarine or butter softened
- 3/4 cp sugar
- 2 eggs
- 1/2 cp coarsely chopped walnuts
Golden Mushroom Pork Chops

1. Stir the soup, water, sugar, Worcestershire, & thyme in crock pot 2
- 2 cans Campbells Cream of Mushroom Soup
- 1/2 cup of water
- 1 tblsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 8 boneless pork chops
- 4 large Granny Smith apples, sliced
Banana Chocolate Chip Muffins

1. Heat oven to 350 degrees 2
- 1 1/2 cups flour
- 2/3 cups sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup mashed ripe bananas
- 1 large egg
- 1/4 cup (1/2 stick) butter, melted
- 1/4 cup fat free or light sour cream
- 2 tsp vanilla extract
- 1/4 cup low-fat milk
- 1/2 cup mini semi sweet chocolate chips
Pan-fried Catfish

1. In a shallow bowl combine flour, red pepper, black pepper, & salt
- 1/4 cup corn flour or all purpose flour
- 1/2 tsp ground red pepper
- 1/4 tsp ground black pepper
- 1/8 tsp salt
- 1 pound catfish fillets
- Cooking oil or shortening for shallow-pan frying
- Tartar sauce (optional)
