- 1/4 cup milk
- 1 lb ground beef
- 2 cups spaghetti sauce
- 9 cooked lasagne noodles
- 1 cup shredded mozzarella cheese
Pasta, tortellini, tofu soup

1. Boil the chicken breasts in a dutch oven of water (approximately 12 - 14 cups of water 2
- 1 lb boneless skinless chicken breasts
- 8 ounce package of cheese-filled tortellini
- Garlic powder
- 1 cup cooked long grain wild rice
- 1 package of firm tofu
- 1 26 oz can of spinach, drained
SALAD - MEDITERRANEAN CHICKPEA SALAD

Lettuces, chickpeas, cukes, tomatoes, feta, herbs, and olives (my add)
- 6 oz Spring mix lettuce
- 4 oz Romaine lettuce, chopped
- 4 oz Spinach, fresh, chopped
- 1/4 cp Parsley, fresh, chopped
- 1/4 cp Mint bunch, fresh, chopped
- 1 1/2 cp Cucumber sliced half moon
- 2 cps Chopped tomatoes
- 1 1/2 cp Chickpeas
- 2 oz Feta, crumbled
- 6 tps Greek feta vinagrette
Crab Quiche

Preheat oven to 450 degrees 1
- Pie crust (Pillsbury)
- 6 eggs
- 3 cups light cream
- 1 1/2 tsp salt
- 1 lb crabmeat in chunks
- 1 1/2 cups shredded Swiss cheese
- 1/4 tsp pepper
- Parsley flakes
CARROT CAKE

1. Mix ingredients in order, beating well after each addition 2
- 4 BEATEN EGGS
- 1 1/2 cup cooking oil
- 2 cups sugar
- 2 cups flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1 tsp salt
- 2 tsp cinnamon
- 3 cups grated carrots
- 1 cup chopped nuts
Pasta & Mozzarella Salad

1. Cook pasta until tender & drain 2
- Place 1 egg in blender & blend 5 seconds. With blender running, slowly add 1 cup olive oil til thick. Add:
- 8 ounces corkscrew macaroni
- 1/2 cup Parmesan dressing (see below)
- 10 ounces of fresh spinach, torn
- 8 ounces thinly sliced ham, chopped
- 8 ounces mozzarella cheese, cubed
- PARMESAN DRESSING
- 1/2 cup grated parmesan cheese
- 1/4 cup white wine vinegar
- 1/2 to 1 tsp pepper
- 1/2 tsp salt
- 1/4 tsp ground cloves
- 1/4 tsp garlic powder
- Blend til smooth
Smoked Salmon Triangles

- 12 thin slices of pumpernickel bread, cut in half diag
- 8 ozs cream cheese
- 2 tsp caraway seeds
- 8 ozs thinly sliced smoked salmon

PASTA ALLA VODKA W/ROASTED WINTER SQUASH

- 3-4 lbs winter squash - butternut
- 4 tblsp olive oil, divided
- 1 tsp granulated sugar
- 3 tsp kosher or sea salt, divided plus 1 tblsp for pasta water
- Freshly ground pepper
- 1 small red onion, diced
- 3 medium sized garlic cloves, minced
- 1/4-3/4 tsp crushed red-pepper flakes
- 1 (28 ounce) can whole tomatoes, coarsely chopped, juices reserved
- 1/2 cup vodka
- 2/3 cup heavy cream
- 1 lb finely grated parmigiano Reggiano cheese plus extra for garnish
- 1/3 cup chopped fresh basil
