Spinach Dip

1. Lightly coat a skillet with nonstick cooking spray 2
- Non stick cooking spray
- 1/2 cp onion powder
- 2 10 oz cans spinach
- 1 8 oz package cream cheese
- 1 8 oz carton low fat or fat free sour cream
- 3/4 cp Parmesean cheese
- 1 14 oz can artichoke hearts, chopped
- 1/4 tsp salt (optional)
BUTTERNUT SQUASH & PESTO ROTINI

1. Heat large covered saucepot of salted water to boiling on high
- 12 oz multigrain rotini
- 1 pkg (20 oz) diced butternut squash
- 1/2 cup roasted almonds
- 2 cloves garlic
- 2 cups fresh basil leaves for garnish
- 1 tsp freshly grated lemon peel
- Salt & pepper
- 1/4 cup extra virgin olive oil
- 1/2 cup freshley grated Parmesan cheese, plus additional for garnish
Clam-stuffed Mushrooms

1. Remove stems from mushrooms & chop 2
- 1 1/2 lbs large fresh mushrooms
- 1 tsp ground garlic
- 1/2 cp butter or margarine, melted
- 2 6 oz cans of chopped claims in juice, not drained
- 1 cp Italian seasoned breadcrumbs
- 1/4 cp parsley flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
Three Cheese Pockets

Pre-heat oven to 375 degrees
- 2 oz pepperoni, finely chopped
- 1 4 oz jar mushrooms, drained & finely chopped
- 2 tblsp finely chopped black olives
- 4 oz cream cheese, softened
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 4 tbslp grated Parmesan cheese, divided
- 1/8 tsp salt
- 1/8 tsp black pepper
- 4 mozzarella string cheese sticks
- 1 14 oz can refrigerated pizza dough
- 3 tbslp Italian dressing, divided
Tomato Crostini & Pesto

- 12 slices French bread, 1 inch thick
- 2/3 cps pesto
- 2 small tmoatoes seeded & chopped (1 cp)
- 1 cp shredded mozzarella cheese (4 oz)

- 1/4 cup orange juice
- 6 scallions, sliced

- 1 pint grape tomatoes, halved
- 1/2 cup pitted kalmata olives, halved
- 1 cup bulgur wheat
