In a skillet over med. heat, saute garlic in butter for 1 min
- 2 garlic cloves. minced
- 2 Tbsp butter
- 2 lbs. uncooked shrimp, peeled & deveined
- 1/2 cup white wine
- 2 cups shredded Monterey Jack cheese
- 2 Tbsp minced fresh parsley
Cheddar Chicken Chowder

1. Cook bacon in a Dutch oven over medium-high heat until crisp
- 2 bacon slices
- 1 pound skinless, boneless chicken breast, cut
- into bite-size pieces
- 1 cup chopped onion

1. Preheat oven to 350. Mist a 9 inch square ovenproof ceramic or glass baking dish with cooking spray
- 4 large eggs
- 1 1/2 cups heavy cream
- 2 Tbsp sugar
- 4 Tbsp unsalted butter, melted
- 2 Tbsp all purpose flour
- 2 tsp baking powder
- 4 cups frozen corn, thawed
- 1 cup chopped scallions
- 1 small red bell pepper, seeded and chopped
Corn Casserole

In a deep bowl mix eggs, add in package of cornbread Mix in the three cans of corn
- 1 Package JiffY Cornbread Mix
- 2 beaten eggs
- 1 15 oz. can of crearned corn
- 2 11oz. cans of sweet niblets corn, drained
- 1 large minced onion
- 1 stick butter (reduced calorie ok)
- 2 cups sour cream (lite is ok)
- 3 cups sharp cheddar cheese, grated
Mozzarella and Nectarine Skewers With Pesto

- 1 pound fresh mozzarella cheese
- 3 ripe nectarines or peaches
- 1/2 cup pesto

Butter & flour a 9 inch round or square pan
- 4 cups of flour
- 4 Tbsp or 1/4 cup of sugar
- 1 & 1/2 tsp of baking soda
- 1 tsp of baking powder
