After-Thanksgiving Turkey Soup

1. Place turkey carcass in a soup kettle or Dutch oven and cover with water
- 1 leftover turkey carcass
- 3 medium onions, chopped
- 2 large carrots, diced
- 2 celery ribs, diced
- 1 cup butter, cubed
- 1 cup all-purpose flour
- 2 cups half-and-half cream
- 1 cup uncooked long grain rice
- 2 teaspoons salt
- 1 teaspoon chicken bouillon granules
- 3/4 teaspoon pepper
Chili con Carne II

1. In a medium sized stock pot, heat the oil over medium heat
- 1/2 cup and 2 tablespoons vegetable oil
- 4 large onions, chopped
- 2 chile pepper, chopped
- 10 cloves garlic, chopped
- 4 pounds lean ground beef
- 6 (14.5 ounce) cans whole peeled tomatoes with liquid, chopped
- 1 tablespoon salt
- 2 teaspoons freshly ground black pepper
- 3 tablespoons ground cumin
- 1 tablespoon chili powder
- 1/4 cup paprika
- 1/4 cup dried oregano
- 4 cinnamon sticks
- 12 whole cloves
- 4 (15.25 ounce) cans red kidney beans, rinsed and drained
Cabbage Fat-Burning Soup

Place carrots, onions, tomatoes, cabbage, green beans, peppers and celery in a large pot Add onion soup mix, tom
- 5 Carrots, chopped
- 3 Onions, chopped
- 2 16 oz. cans Whole Peeled Tomatoes, with liquid
- 1 Large Head Cabbage, chopped
- 1 envelope Dry Onion Soup Mix
- 1 15 oz can Cut Green Beans, drained
- 2 quarts Tomato Juice
- 2 Green Bell Peepers, Diced
- 10 Stalks Celery, Chopped
- 1 14 oz Can Beef Broth
Beet Stem Salad

Slice stems into 1 inch pieces and roughly chop leaves
- Stem and leaves form beets
- 1 Tbsp olive oil
- 2 garlic cloves, sliced
- 1/8 red pepper flakes
- 1 Tbsp red wine vinegar
Aunt Dorothy's Cheese Dip

Mix all ingredients together Can be made day before Take out and bring to room temp
- 1 pound Sharp Cheddar Cheese, shredded
- 1 med Onion, grated
- 1/4 cup Safflower Oil
- 2 small cans Black Olives, chopped
- 1 can Green Chilis, diced
- 1 small can Tomato Sauce
Cheesy Shrimp Toast Canapes

Mix all ingredients well. These are approximate amounts and you may wish to vary them a bit
- 1 pound Bay Shrimp, cooked
- 2 cups Sharp Cheddar Cheese, grated rind and juice
- 3/4 appox cup Lite Mayo
- 2 Tbsp. Capers
- 1 pkg. Cocktail Rye Bread
Chicken n Shrimp Jambalaya

In slow cooker. combine chicken, tomatoes, onions and peppers
- 2 lbs. boneless chicken, cubed
- 1 can (14.5oz) diced tomatoes with garlic and olive oil
- 1 green pepper chopped
- 1 yellow pepper chopped
- 1 onion chopped
- 1 pkg. (8oz) Jambalaya rice mix
- 1 lb. large shrimp, cleaned w tails
Crab Stuffed Mushrooms

- 14 ounces crabmeat
- 10 green onions, thinly sliced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground savory
- ground black pepper to taste
- 1/2 cup grated Parmesan cheese
- 2/3 cup mayonnaise
- 1/4 cup and 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon paprika
