Corn Pudding w Scallions and Red Peppers

  • 4 large eggs
  • 1 1/2 cups heavy cream
  • 2 Tbsp sugar
  • 4 Tbsp unsalted butter, melted
  • 2 Tbsp all purpose flour
  • 2 tsp baking powder
  • 4 cups frozen corn, thawed
  • 1 cup chopped scallions
  • 1 small red bell pepper, seeded and chopped


Preparation time 10mins
Cooking time 50mins


Step 1

1. Preheat oven to 350. Mist a 9 inch square ovenproof ceramic or glass baking dish with cooking spray.
2. In a blender, combine eggs,cream,sugar,butter,flour, baking powder and salt, blend. Add corn, blend until mixture is nearly smooth. Stir in scallions and pepper. Pour into dish and bake until set and golden brown on top. 40-50 minutes
3. Remove from oven and allow it to rest for 5-10 minutes before serving
