Tomato and Basil Cups

- 1 small onion - finely chopped
- 1/2 cup mayo
- 1/2 cup real bacon bits
- 1/2 cup shredded swiss cheese
- 1 can petite diced tomatoes
- 1 tsp dried basil
- 1 (12 oz) can flaky buttermilk biscuits (brand name tastes best)
To Die For Banana Cake with Vanilla Bean Frosting

To make cake (easily mixed by hand): Preheat the oven to 375F (see note below)
- Cake:
- 2/3 cup sugar
- 1/2 cup sour cream
- 1 egg
- 2 tablespoons unsalted butter, softened
- 2 mashed super ripe bananas (about 3/4 cup)
- 1 teaspoon pure vanilla extract
- 1 cup flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- Frosting:
- 2 tablespoons unsalted butter, softened
- 1/4 cup heavy cream
- 1/2 teaspoon vanilla bean paste* (see below)
- 1 1/4 cups confectioner's sugar

- 1/4 cup butter or margarine
- 1 1/4 cups all purpose flour
- 2 tsp sugar
- 2 tsp baking powder

Place brown sugar, yeast, and warm water in a bowl
- 1 packet active dry yeast (I use Red Star Quick Rise)
- 1 1/2 C hot (110-120 degrees) water
- 2 T brown sugar
- 1 t salt
- 1 C bread flour (important for light texture)
- 3 C all-purpose flour (next time, I’ll try substituting some whole wheat flour)
- 2 C warm water
- 2 T baking soda
- 1/4 C melted butter

- 2 1/4 teaspoons instant yeast (1 envelope)
- 1/2 teaspoon salt

- 1/4 cup butter
- 1/4 cup water
- 2 eggs, at room temperature
- 12 ounces sharp cheddar cheese, freshly grated (1 1/2 bricks) (used white cheddar in dough and reg in between)

- 2 pounds Beef Stew Meat (sirloin Cut Into Cubes)
- 2 Tablespoons Flour
- 4 Tablespoons Butter

- 3 cloves Garlic, Minced
- 8 ounces, weight Cremini Or White Button Mushrooms

Easy Parmesan Knots

Roll each biscuit into a 12-in
- 1 tube (12 ounces) refrigerated buttermilk biscuits ( I used Pillsbury Golden Layers Refrigerated Buttermilk Biscuits)
- 1/4 cup canola oil
- 3 tablespoons grated Parmesan cheese (I did use the green can stuff)
- 1/2 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley flakes
Chicken Caesar Club Sandwiches

Preheat the oven to 350˚ F
- 2 chicken breasts (whole or boneless, skinless)
- Olive oil
- Kosher salt
- Freshly ground black pepper
- 1 large clove garlic, chopped
- 2 tbsp. fresh flat leaf parsley, chopped
- 1-1 1/2 tsp. anchovy paste
- 1 tsp. Dijon mustard
- 1 1/2 tbsp. freshly squeezed lemon juice
- 1/2 cup mayonnaise
- 1 long loaf ciabatta bread, or 4 ciabatta sandwich rolls
- Romaine lettuce leaves, washed and dried (or baby spinach or arugula)
- Shaved Parmesan cheese

- For the Filling:
- 1 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon fresh ground nutmeg
- 2 ounces unsalted butter, melted until browned
