Barbacoa Beef Burritos

For beef rub, mix together pepper, salt, cumin and chile powder
- 1 teaspoon ground pepper
- 3/4 teaspoon salt
- 3/4 teaspoon ground cumin
- 3/4 teaspoon chile powder
- 2 tablespoons fresh lime juice
- 1 small can chopped green chiles
- 1 1/2 pounds boneless beef tip (shoulder)
- 1 cup water
- 2 garlic cloves, minced
- 1/4 cup red onion, chopped
- 8-10 flour tortillas
- 16 ounce monterey jack cheese
- chipolte rice (recipe in "side dishes")
Buffalo Chicken Cheese Balls

- 2 cans chicken, drained
- 1/4 cup franks hot sauce
- 1 teaspoon ground black pepper
- 1 3/4 cup sharp cheddar cheese, shredded
- 1/4 cup sliced scallions
- 1 cup all purpose flour
- 3 eggs, lightly beaten
- 2 cups panko bread crumbs
- vegetable oil for frying
Oriental Broccoli Slaw

I typically use slightly less oil than what this recipe calls for
- SALAD:
- 2 pkgs. chicken Ramen noodles (crushed)
- 2 small bags broccoli slaw
- 1 cup blanched almonds
- 1 cup sunflower seeds
- 3/4 cup sliced green onions
- *Set aside noodle seasoning packets for dressing.
- DRESSING:
- 1 cup vegetable oil
- ½ cup sugar (or a little less)
- 1/3 cup vinegar
- seasoning packets from noodles
Honey Roasted Broccoli

Preheat oven to 425 degrees
- 2 heads broccoli stems removed and cut into florets
- 2 Tbsp. butter* melted, or olive oil
- 2 Tbsp. olive oil
- 1 Tbsp. soy sauce** gluten-free
- 1 Tbsp. honey*
- 1 clove garlic crushed
- ½ tsp. salt to taste
- 1/8 tsp pepper to taste

Chicken Fajitas (baked)

1. Preheat the oven to 400 degrees
- 1 Tbsp chili powder
- 1/2 Tbsp paprika
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cumin
- 1/8 tsp cayenne pepper
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 Tbsp corn starch
- Fajitas
- 1 large yellow onion
- 3 medium bell peppers (colors of your choice)
- 1 lb. chicken breast
- 2 Tbsp vegetable oil
- 1 medium lime
- 8 (6-inch) tortillas
Lemon Roasted Potatoes

- 1 1/2 pounds peeled Yukon gold potatoes
- 3 tablespoons olive oil
- 3 garlic cloves, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried oregano
- 1/4 cup lemon juice
- 1/4 cup chicken broth
- chopped parsley (for garnish)
Chicken Enchiladas

Place chicken in single layer in a large skillet with chicken broth
- 2-3 chicken breasts
- 3 fresh poblano chilies, roasted
- 1 large tomato, seeded & chopped
- 1/2 cup white onion, chopped
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/2 cup chicken broth
- 1 cup heavy cream or half & half
- 2 cups shredded Chihuahua cheese
- 8-10 flour tortillas
Oreo Ice-box Cake

Dip 30 Oreo Cookies in milk one by one and lay flat in a 9x13 pan
- 90 Oreo Cookies (I used Double Stuf, but you can use Original)
- 3 (12 oz) tubs Cool Whip, thawed
- 1 1/2 - 2 cups milk
- chocolate sauce if desired
- (this recipe is for an army! I make it in a 8x8 inch pan)
Whoopie Pies

Preheat oven to 375 degrees
- BATTER:
- 1 1/2 cups all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- pinch of cinnamon
- 1/2 cup unsalted butter, softened
- 1 cup light brown sugar
- 1 large egg
- 1 cup unsweetened appleasauce
- FROSTING:
- 1/2 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/2 cup butter, softened
Pork Lo Mein

Freeze the pork tenderloin for about 15 minutes, to make it easier to cut
- 1 lb pork tenderloin, trimmed
- 3 Tbs low-sodium soy sauce
- 2 Tbs oyster sauce
- 2 Tbs sugar
- 1 Tbs sesame oil
- 1/2 tsp five spice powder
- 1/2 c low-sodium chicken broth
- 1 tsp cornstarch
- 2 Tbs canola oil, divided
- 2 garlic cloves, minced
- 2 tsp fresh ginger, minced
- 1/4 c rice wine or dry sherry
- 4 oz shitake mushrooms, stemmed and cut into thirds if large, halved if small
- 1 bunch scallions, white parts sliced thin, green parts cut into 1-inch pieces
- 1/2 head Napa cabbage, halved, cored, and sliced into 1/2 inch strips
- 12 oz Chinese egg noodles, cooked according to the package directions
- 1 Tbs chili garlic sauce
