Pretzel Jello Dessert

Combine crushed pretzels, melted butter and sugar
- CRUST:
- 2 cups crushed pretzels
- ¾ cup melted butter
- 2 T. sugar
- CREAM CHEESE LAYER:
- 1 (8 oz.) cream cheese
- 1 cup powdered sugar
- 1 (8 oz.) Cool Whip
- JELLO LAYER:
- 1 (6 oz.) strawberry jello
- 1 cup boiling water
- 1 or 2 (10-oz.) frozen strawberries
- 1 (8 oz.) can crushed pineapple (drained)
Stuffed Cabbage

- cabbage, one small head
- 1-1/2 lb. unseasoned ground pork
- 2 smoked pork chops or ham
- 1-2 Tblsp. Spanish paprika
- ¾ cup uncooked rice
- 2 eggs, beaten
- 1 clove garlic, crushed
- 1-2 T. black Pepper
- 1 T. salt
- 1 can sauerkraut
- smoked meat/bones
Buffalo Chicken Dip

PREHEAT oven to 350°F. COMBINE all ingredients in a 1-quart baking dish
- 1 (8 oz.)pkg. PHILADELPHIA Cream Cheese, softened
- 1/4 to 1/2 cup FRANK'S® Buffalo Wings Sauce
- 1/2 cup Bleu cheese or ranch dressing (I use ranch)
- 2 cans chicken
- 1/2 cup Crumbled bleu cheese or your favorite shredded cheese

- 1 large egg white
- 1 tablespoon cornstarch
- 1 tablespoon Chinese rice wine or dry sherry
- 1 1/2 pounds skinless, boneless chicken breasts, diced
- For the Stir-Fry Sauce:
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon Chinese rice wine or dry sherry
- 1 teaspoon toasted sesame oil
- 2 teaspoons cornstarch
- For the Noodles:
- 2 bundles cellophane noodles
- Peanut oil, for frying
- For the Stir-Fry:
- 4 tablespoons peanut oil
- 3 cloves garlic, minced
- 1 teaspoon minced peeled ginger
- 1 jalapeno pepper, seeded and minced
- 4 scallions; 2 minced, 2 cut into 1-inch pieces
- Kosher salt
- 1/4 teaspoon sugar
- 1/2 pound shiitake mushrooms,stemmed and diced
- 3/4 cup diced water chestnuts
- Small lettuce leaves, for serving
- soy sauce, chili paste and/or hot mustard, for serving
Eggplant Meatballs

- 3 tablespoons olive oil
- 1 pound eggplant, unpeeled, cut into cubes no larger than 1 inch
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 onion, chopped
- 1 tablespoon garlic, minced
- 1 cup cooked or canned white beans
- 1/4 cup chopped fresh parsley
- 1 cup breadcrumbs, preferably whole wheat
- 2 cups all-purpose tomato sauce
- Pinch of red chile flakes (optional)

In 1-quart saucepan, mix apricot preserves, 1 tablespoon lime juice and the mustard
- DIPPING SAUCE:
- 3/4 cup apricot or peach preserves
- 1 tablespoon lime juice
- 1/2 teaspoon ground mustard
- BREADING:
- 1/4 cup all-purpose flour
- 2 tablespoons packed brown sugar
- 1/4 teaspoon salt
- Dash of ground red pepper (cayenne)
- 1 egg
- 1 tablespoon lime juice
- 1 cup shredded coconut
- 1 lb uncooked peeled deveined medium shrimp
- 2 tablespoons butter or margarine, melted
French Onion - Beef Strudel

Allow dough to rise until doubled
- 1 loaf frozen bread dough, thawed
- 2 cups thinly sliced onion
- 1/4 cup butter
- 6 oz beef tenderloin or sirloin steak, sliced thin
- 1 teaspoon all-purpose flour
- 1 teaspoon brown sugar
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup beef broth
- 3/4 cup shredded Monterey jack cheese
Chocolate Chip Cookies (uses pudding mix)

Preheat oven to 375* Cream together sugars and margarine; beat until fluffy
- 2 1/4 cup flour
- 1 small package instant vanilla pudding
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 cup margarine, softened
- 2 eggs
- 1/4 cup sugar
- 3/4 cup brown sugar
- 12 ounce bag semi-sweet chocolate chips
Turkey & Quinoa Meatloaf

If you can't find quinoa, barley can be used instead
- 1/4 cup quinoa
- 1/2 cup water
- 1 teaspoon olive oil
- 1 small onion, chopped
- 1 large clove garlic, chopped
- 1 (20 ounce) package ground turkey
- 1 tablespoon tomato paste
- 1 tablespoon hot pepper sauce
- 2 tablespoons Worcestershire sauce
- 1 egg
- 1 1/2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 tablespoons brown sugar
- 2 teaspoons Worcestershire sauce
- 1 teaspoon water
Pork Tenderloin (stuffed)

Cut a lengthwise slit down the center of each tenderloin to within 1/2 in
- (Marinade):
- 2 pork tenderloins (3/4 pound each)
- 3/4 cup dry red wine or reduced-sodium beef broth
- 1/3 cup packed brown sugar
- 1/4 cup ketchup
- 2 tablespoons reduced-sodium soy sauce
- 2 garlic cloves, minced
- 1 teaspoon curry powder
- 1/2 teaspoon minced fresh gingerroot
- 1/4 teaspoon pepper
- (Stuffing):
- 1 small onion, chopped
- 1/2 cup butter, cubed
- 1 package (6 ounces) sage stuffing mix
- 1-1/2 cups (12 ounces) sour cream
- 1/2 teaspoon lemon-pepper seasoning
