Chipotle Chicken Salad

For dressing, combine all ingredients in a food processor and mix until completely smooth and combined
- Dressing:
- 1/3 cup chopped fresh cilantro
- 2/3 cup light sour cream or yogurt
- 1/2 tablespoon minced chipotle chile, canned in adobo sauce
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 teaspoons fresh lime juice
- 1/4 teaspoon salt
- Salad:
- 4 cups shredded romaine lettuce
- 2 chicken breasts, marinated and cooked
- 1 cup cherry tomatoes, halved
- 1/2 cup diced peeled avocado
- 1/3 cup thinly vertically sliced red onion
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained or use frozen
- Marinade (for chicken):
- 1/4 cup vegetable oil
- 1/4 cup red wine vinegar
- 1 teaspoon sugar
- 1 teaspoon dried oregano leaves
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Black Bean Soup (pinterest)

In a large pot saute onions and garlic in olive oil until soft
- 2 cans of seasoned black beans (drained, not rinsed)
- 1 can chicken broth
- 1 1/2 cups water
- 2 Tbsp olive oil
- 1 cup chopped onion
- 2 cloves of garlic minced
- 2 tsp chili powder
- 1/4 tsp cumin
- 1 can fire roasted tomatoes
- 1/2 red pepper, chopped
- handful cilantro, chopped
- White Rice (I used minute rice, follow instructions on box for 4 people)
Peanut Butter Cookies (super soft)

- 1/2 cup salted butter, softened to room temperature*
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 3/4 cup creamy peanut butter
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1 and 1/4 cups all purpose flour
- 1/2 cup honey roasted peanuts
- 1/2 cup mini peanut butter cups (OR fun size or regular size peanut butter cups, chopped)
- 1/2 cup peanut butter baking chips
- if using unsalted butter add 1/4 teaspoon of salt to recipe
Turkey Burgers

In a food processor pulse bread until fine crumbs form
- 2 slices white bread
- 1 pound ground turkey
- 2 ounces cheddar cheese, shredded
- 1/2 small onion, grated
- salt & pepper
Stroganoff Sandwiches

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain
- 1-1/2 pounds ground beef
- 1 medium onion, chopped
- 6 to 8 bacon strips, cooked and crumbled
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/8 teaspoon ground nutmeg
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 1/2 cup sliced fresh mushrooms
- 1 cup (8 ounces) sour cream
- 8 hamburger buns, split
Lentil Soup

In a large sauce pan, heat 1 tablespoon oil and add onion and garlic
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- coarse salt & ground pepper
- 2 carrots quartered and diced
- 1 bag brown lentils
- 2 cans vegetable broth
- 1 dried bay leaf
- 1/4 teaspoon cayenne pepper (optional)
Mennonite Dessert

Preheat oven to 350 degrees
- CRUST:
- 1 cup flour
- 1 stick margarine or butter, softened
- 1/2 cup ground nuts
- FILLING:
- 1 8oz. cream cheese
- 1 cup powdered sugar
- 1 9 oz. cool whip
- 2 3oz. packages pudding mix (lemon or pistachio)
- 3 cups milk
Ham & Cheese Quinoa Cups

Preheat oven to 350 degrees
- 2 cups cooked quinoa (about 3/4 cup uncooked)
- 2 eggs
- 2 eggs whites
- 1 cup shredded zucchini (1 small)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup diced ham
- 1/4 cup chopped parsley
- 2 tablespoons grated parmesan cheese
- 2 green onions, diced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
The Best "Creamy" Frosting

- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups milk (I used 1% with stellar results)
- 2 teaspoons pure vanilla extract
- 24 tablespoons (3 sticks) butter, cut into 24 pieces and softened at room temperature
Chicken Pot Pies

Preheat oven to 400 degrees
- 1 tablespoon butter/olive oil
- 1 large onion, chopped
- 1 1/2 cups half & half
- 1/2 cup chicken broth
- 2 tablespoons all-purpose flour
- 2 tablespoons cornstarch
- 1 1/2 teaspoons paprika
- 1 bag frozen mixed vegetables
- 4 cups cooked, shredded chicken
- salt & pepper to taste
