  • 1 lb clean shrimp
  • 2 tbspns fresh lime juice
  • 1/2 cup thinly sliced green onions
  • 4 fresh basil leaves, thinly sliced

  • 5 pickling cucumbers, peeled, ends trimmed, and cut into 1/4-inch cubes
  • 1 small red onion, cut into 1/4-inch cubes
  • 1 large tomato, cored, seeded, and diced
  • 1 bunch Italian parsley leaves, chopped
  • 2 bunches mint leaves, chopped
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 lemon, juiced
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon freshly ground black pepper
  • 1 avocado, peeled, seeded and diced, for garnish

  • spice mixture:
  • 1/4 cup EVOO
  • 2 tbspns fresh oregano or 1 dried
  • 1 small onion sliced
  • 2 cloves garlic, crushed
  • 2 tbspns honey
  • 1 tspn salt
  • 1 lb. boneless, skinless chicken breasts cut into strips
  • 8 bamboo skewers soaked in warm wter 30 mins.
  • fennel salt from full circle or
  • spice mixture
  • 1 tsn each: cumin, coriander,mustard seed and fennel seed, 2 clove buds, 2 allspice berries
  • place all the ingreients in a mortar, spice grinder , coarsely grind.

  • Dressing:
  • 2 tablespoons fresh-squeezed lemon juice
  • 1 teaspoon red wine vinegar
  • 1/3 cup extra-virgin olive oil
  • 1 clove minced garlic
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon dried oregano
  • coarse salt and fresh black pepper
  • Salad:
  • 1 small zucchini or cucumber, peeled, seeds removed and cubed
  • 1/3 cup kalamata olives, cut in half
  • 1 can chickpeas, drained, rinsed and patted dry
  • 1 small red onion, thinly sliced
  • 1/3 to 1/2 cup crumbled feta
  • 2 - 3 vine ripened plum tomatoes, chopped or 1/2 pint grape or cherry tomatoes, cut in half
  • 3 tablespoons pine nuts
  • 5 - 6 cups chopped romaine hearts, washed and dried well
  • 2 - 3 cups fresh baby spinach, washed and dried well
