- 1/4 white onion chopped
- 1/2 red bell pepper chopped
- 1/2 green bell pepper chopped
- 15 oz. can black beans rinsed and drained
- 15 oz can corn rinsed and drained
- 2 tbspn or more lime juice
- 1 tbspn corn/canola oil
- 8 + oz cooked diced chicken
- 1/2 packet taco seasoning
- 4 tbspn or more fresh cilantro chopped

- 1/3 cup chopped red onion
- 5 oz dried cherries or cranberries
- 1 -29 oz can mandarin oranges
- 8.8oz box israeli pearl couscous-cooked according to directions, cooled and lightly salted
- 1.5 lbs cook diced chicken seasoned with salt and pepper and lemon-optional

- 5 small corn tortillas
- 1 1⁄2 cups finely shredded colby-monterey jack cheese, blend
- 1 ⁄2 lb smoked cooked chorizo sausage, coarsely chopped or any sausage
- 1 (4 1/2 ounce) can chopped green chilies

- 1 ⁄2 cup milk

Place the walnuts, pignolis, and garlic in the bowl of a food processor fitted with a steel blade
- 1/4 cup walnuts

- 3 tablespoons chopped garlic (8 cloves)

- 1 teaspoon kosher salt (some say less)

- 1/4 cup grated parmesan cheese
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 tbspn or less anchovy paste
- 6 cups torn romaine
- 2 cups cooked chicken cut up
- 2 cups slicved fresh porcini mushrooms
- 1 cup small cherry tomatoes
Giblet Gravy

- Giblets (neck, gizzard, heart, liver) from a turkey (or chicken)
- 2 tablespoons butter
- 1 cup diced onion
- 1/2 cup diced carrot
- 1/2 cup diced celery
- 1 tablespoon minced garlic
- 1 bay leaf
- 1 teaspoon dried thyme
- 5 cups water
- Drippings from the turkey or chicken
- 2-3 tablespoons flour (or 2-3 Tbsp of corn starch, dissolved first into 1/4 cup of water)
- Salt to taste
- 1-2 teaspoons of mustard (yellow or Dijon)
