5-Minute Individual Potato Gratins

- Vegetable spray
- 2 large russet potatoes, roughly peeled and thinly sliced
- 1/2 cup grated Swiss cheese
- 2 green onions, finely chopped
- Salt and freshly ground black pepper
- 3/4 cup heavy cream
Diablo 7-layer Dip

Blend taco mix into sour cream and refrigerate for at least an hour or up to several hours
- 1 pint sour cream
- 2 avocados mashed with a pinch of salt and lemon juice, or 1 container guacamole dip
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded sharp cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup scallion, green part only, sliced or snipped with scissors
- 2.5 oz can chopped black olives
- 2 bags tortilla chips
- 1 package taco seasoning mix
- 1 15 oz can refried beans
Ham and Bean Soup

Made with leftover cooked spiral ham-added potatoes
- 2 medium carrots, sliced
- 2 celery ribs, chopped
- 1/2 cup chopped onion
- 2 tablespoons butter
- 4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
- 4 cups chicken broth
- 2 cups cubed fully cooked ham
- 1 teaspoon chili powder
- 1/2 teaspoon minced garlic
- 1/4 teaspoon pepper
- 1 bay leaf

- 3/4 cup buttermilk 2%
- 1 TB pure maple syrup
- 1-1/2 ts vanilla
- 1-1/2 ts pure lemon extract
- 1 cup frozen, unsweetened blueberries

- 3/4 cup old fashioned or quick cook oats (not instant!)
- 1/4 cup white sugar
- 1/4 cup firmly packed brown sugar

Roast Turkey

- 1 red apple, sliced
- 1/2 onion,sliced
- 1 cinnamon stick, or ground
- 1 cup water
- 4 sprigs rosemary
- 6 leaves sage

Shrimp Ceviche

- 2 -3 lbs shrimp, peeled and deveined
- 2 large tomatoes, diced
- 1 red onion, diced
- 1 bunch cilantro, diced
- 1 serrano peppers or 1 jalapeno, diced
- 8 limes, squeezed
- 8 lemons, squeezed
- 2 oranges, squeezed (preferably sour oranges)
- 2 large avocados, diced
- 2 large cucumbers, peeled and diced
Cod and potato stew

Sprinkle both sides of the cod with the salt and pepper
- 1 pound(s) uncooked cod, fillet, cut into 4 pieces
- 1/2 tsp table salt
- 1/4 tsp black pepper, freshly ground
- 3 tsp olive oil
- 1 medium onion(s), thinly sliced
- 1 clove(s) (medium) garlic clove(s), minced
- 1 medium tomato(es), chopped
- 1 pound(s) uncooked red potatoes, unpeeled, scrubbed, and quartered

In a med. bowl, whisk lime juice, oil, honey, salt, and cayenne until blended
- 1/4 cup lime juice
- 1 tsp. evoo
- 2 tbspn. honey
- 1/4 tsp. kosher salt
- 1/8 tsp cayenne
- 1 qt. spring mix
- 1 lg unpeeled Asian pear, cut into thin wedges
- 2 firm-ripe unpeeled fuyu persimmons, cut into thin wedges

Delicata Squash Soup

Similar to the Butternut Squash soup but a little easier! Great Fall night dinner with crusty bread and salad
- 2 winter squash (delicata) halved lengthwise and seeded
- 1/2 onion and 1 shallot (small) chopped
- 2 cloves garlic, roasted with squash
- 3-4 cups veg. stock
- 1/4 cup heavy whipping cream
- 2 T butter

- 1/8 t nutmeg
- 1 t cider vinegar
- 1 t fresh or dried sage (optional)
