1. Brown ground beef in a large saucepan or pot over medium heat
- 1 pound ground beef
- 1 Small onion, diced (1 cup)
- 1 Large Carrot, Julienne (1 cup)
- 3 Stalks Celery, Chopped (1 cup)
- 2 cloves garlic, minced
- 2 14.5 Ounce cans diced tomatoes
- 1 15 ounce can red kidney beans(w/ liquid)
- 1 15 ounce can Great Northern beans(w/ liquid)
- 1 15 ounce can tomato sauce
- 1 12 ounce can V-8 Joice
- 1 Tablespoon White Vinegar
- 1 1/2 Teaspoon Salt
- 1 Teaspoon Dried Oregano
- 1 Teaspoon Dried Basil
- 1/2 Teaspoon Ground Black Pepper
- 1/2 Teaspoon Dried Thyme
- 1/2 pound (1/2 pkg) Ditali Pasta
Olive Garden Chicken Scampi

- 3 tablespoons butter
- 2 Tablespoons minced white onion
- 1/4 Cup minced garlic (8 to 12 cloves)
- 1 1/2 Cups Chablis Wine
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Italian Seasoning
- 1/2 Teaspoon crushed Red pepper flakes
- 1/4 Teaspoon Ground Black Pepper
- 2 Teaspoons minced fresh Parsley
- 1 Cup Heavy Cream
- 5 to 6 Quarts Water
- 16 Ounces Angel Hair Pasta
- 4 Tablespoons Olive Oil
- 12 Chicken Tenderloins
- 1/2 Cup All-Purpose flour
- 1 Green Bell Pepper Cut Into Bite-Size strips
- 1 Red Bell Pepper cut into Bite-Size Strips
- 1 Yellow Pepper, Cut into Bite-Size Strips
- 1 Chopped Red Onion
- 2 Teaspoons Minced Fresh Parsley
Honey Pecan Triangles

Preheat oven to 375 degrees F
- Crust:
- 6 tablespoons softened butter
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/4 cups all purpose flour
- Filling:
- 14 tablespoons butter
- 1/3 cup brown sugar
- 1/3 cup honey
- 2 tablespoons heavy cream
- 1 3/4 cups toasted pecans and chopped
Chipotle Mayo

Mix all ingredients into a bowl and chill
- 1/4 Cup Mayonnaise
- 1/4 Teaspoon Ground Chipotle Chile Pepper
- 1/8 Teaspoon Paprika
Asian Chicken Rolls with Tangy Plum Sauce

Preheat oven to 400 and line baking sheet with parchment paper
- Rolls-
- 1/3 C. chopped scallions (about 3)
- 6 T. chopped fresh cilantro, divided (I used all of it since I wasn't making the dipping sauce)
- 1/2 tsp. ground ginger
- 1 lb. boneless, skinless chicken breasts, cubed
- 2 T. low-sodium soy sauce
- 1 tsp chili garlic sauce
- 1 egg - separated
- 1/2 C. canned water chestnuts, chopped
- 1 sheet puff pastry
- 1 tsp. each white and black sesame seeds (I used poppy and white sesame)
- Sauce-
- 1/2 C, plum jam
- 2 T. lime juice
- 2 T water
- 1 T. ketchup
- 1.4 tsp. each salt and red pepper flakes

- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/3 cup (packed) light brown sugar
- 12 Gingersnaps, crushed (see Note)
- 1/8 teaspoon ginger
- 1/8 teaspoon salt
- 1 stick (4 ounces) unsalted butter, melted and cooled
- FILLING
