- 1/2 tbsp harissa
- 1 tbsp olive oil
- 2 tbsps balsamic vinegar
- 1 tsp dried oregano
- 8 oz baby portobello mushrooms, halved lenghtwise

- 1 tablespoon veg oil
- 4 6 inch corn tortillas cut into strips
- 1 small onion
- 1 small tomato diced
- 3 serrano peppers diced
- salt and pepper to taste
- 6 eggs lightly beaten
- fresh cilantro (optional)
- sour cream (optional)
- fry tortilla strips in oil until browned
- add onion, pepper and tomato to pan with tortilla
- cook until onions are tender
- stir in eggs and cook until firm
- plate and garnish with cilantro and sour cream
