Easy Coq au Riesling

This dish is the perfect easy Monday night recipe, but also fancy enough to serve for a holiday dinner or party
- 2 2 4 pounds skin on, bone in chicken breasts (about 4 breasts)
- kosher salt and pepper
- 2 2 2 tablespoons extra virgin olive oil
- 2 2 2 tablespoons butter
- 1 1 1 sweet onion, diced
- 3 3 3 cloves garlic, minced or grated
- 2 2 2 carrots, chopped
- 1 1 1 pound mixed mushrooms, halved
- 2 2 2 cups white wine
- 1 1 1 cup heavy cream
- 2 2 2 tablespoons Sir Kensington's Dijon Mustard
- 1/2 1/2 1/2 cup grated parmesan cheese
- 4 4 4 sprigs fresh thyme
Michelada Recipe

Directions 1) Stir together all the ingredients except the beer and salt ingredients
- Michelada Salt:
- 2 light lager beers
- 1 cup clamato juice
- 2 teaspoons pickle juice
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon hot sauce
- 1/2 lime, juice only
- 2 tablespoons kosher salt
- 1 teaspoon Old Bay seasoning
- 1 teaspoon celery salt
Jalapeño Corn Bread Stuffing

Combine corn bread, bread cubes and chopped eggs in large bowl; mix lightly
- 5 cups corn bread cubes
- 5 cups toasted bread cubes
- 2 hard-cooked eggs, chopped
- 2 tablespoons unsalted butter
- 2 cups finely chopped onion
- 2 large cloves garlic, minced
- 1 1/2 cups green bell peppers
- 1 cup finely minced celery
- Salt and freshly ground black pepper to taste
- 2 lightly beaten eggs
- 1 cup good quality chicken stock (approximately)
Cranberry Apple Cider Cocktail Recipe

Fill glass and cocktail shaker with ice
- 2 ounces cranberry juice
- 1 ounce fresh squeezed orange juice, strained
- 1 ounce vodka
- 1 bottle hard cider, chilled (I used Angry Orchard Apple Ginger)
- apple slice for garnish
Coconut Pineapple Run Drink

Instructions If you are using real coconut, crack that sucker open now and gather up the juice
- 1 1/2 oz white rum
- 1/2 oz Malibu
- 1 oz coconut Water
- 3 oz pinapple juice
- 1/2 - 1 Lime juiced
- Splash of soda
Toasted Sesame Ginger Salmon

Line a baking sheet with aluminum foil and place a wire rack over top
- 1 1/2 lbs raw salmon
- 1/4 cup olive oil
- 2 tbs rice vinegar
- 2 tbs tbs brown sugar
- 2 tbs soy sauce
- 2 garlic cloves, grated
- 1 tbs freshly grated ginger
- 1-2 tbs toasted sesame seeds
- 4 green onions, sliced
- sesame ginger honey glaze
- 1/4 cup honey
- 1 tsp toasted sesame oil
- 1 tsp soy sauce
- 1/2 tsp freshly grated ginger
- 1/2 tsp toasted sesame seeds
Cornbread-Brown Butter Stuffing

In a medium skillet over medium-low heat, melt the butter
- 6 tablespoons unsalted butter
- 9 cups stale cornbread, crumbled into large chunks
- 1/3 cup thinly sliced scallions
- 2 large eggs
- 1 1/2 to 2 tablespoons chopped fresh sage or rosemary
- 3/4 teaspoon kosher salt
- 1/8 teaspoon chili powder
- Black pepper, as needed
- Turkey or chicken stock, optional

Taqueria Styled Pickled Jalapenos and Carrots

This recipe will result in two pint-sized jars of pure zip
- 8-10 jalapenos
- 3 carrots
- 1 onion
- 4-6 cloves of garlic

- 1.5 cups white vinegar
