Crab Cakes

Heat oven to 375. Whisk egg and dressing in large bowl until well blended
- 1 egg
- 1/4 cup ranch dressing
- 2 cans (6 oz. each) crabmeat, drained, flaked
- 20 RITZ Crackers, coarsely crushed (about 1 cup)
- 1/3 cup shredded Parmesan, Romano, and Asiago cheese blend
- 2 green onions, sliced
- 1/4 tsp. ground red pepper (cayenne)

Instructions Preheat the oven to 375
- 2 Tbs. oil
- 1 large sweet onion, chopped (I used Texas 1015, you can also use Vidalia)
- 8 oz. cheddar cheese, shredded
- 6 cups all-purpose flour
- 2 tsp. Kosher salt
- 2 Tbs. baking powder
- 24 oz. beer (2 bottles) (I used a beer light in taste. Strong beers can leave a bitter aftertaste)
- 2 Tbs. honey
GARLIC-THYME STEAK MARINADE

INSTRUCTIONS FOR GARLIC-THYME STEAK MARINADE Combine Marinade ingredients in medium bowl
- 2 pounds beef Flank or Skirt Steak or 2 pounds Top Round Steaks, cut 1-inch thick
- Salt and pepper
- 1/4 cup vegetable or olive oil
- 3 tablespoons red wine vinegar
- 3 tablespoons chopped fresh thyme or 1 tablespoon dried thyme leaves
- 2 tablespoons sweet or smoked paprika
- 3 cloves garlic, minced
- 1/4 teaspoon ground red pepper

- for the dry spice rub:
- 4 tbsp ground dark roast coffee (Italian or French Roast)
- 2 tbsp fine granulated brown sugar
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp ground cayenne pepper or red chili powder
- 1/2 tsp coriander powder
- 1/2 tsp finely ground sea salt
- For the wet sauce:
- 1/4 cup dark rum
- 3 tbsp tomato paste
- 3 tbsp dijon mustard
- 2 tbsp tamarind paste
- 2 tbsp maple syrup
- 1 tbsp harissa
- 1 tbsp ground cayenne pepper
- 1 tbsp diced scotch bonnet pepper
- 1 tbsp orange juice

- 2 cups coconut rum
- 3 scoops lime sherbet
- 3/4 cup fresh lime juice, plus lime slices and zest for garnish
- 3/4 cup coconut water
