Potato and Roasted Veggie Soup

- 3 lb Yukon gold potatoes, peeled and diced
- 2 large leeks (green part used to flavor the chicken stock) light green and white parts diced
- 2 large fennel bulbs, diced
- 1 lb bag of baby carrots, chopped
- 2 cartons chicken stock
- 3 cups of water
- 3 cups of half and half or skim milk for lighter version
- Olive oil
- 2 tbsp butter
- Salt and pepper
- 1/2 teaspoon of cayenne (to taste)
Short Ribs

- 1/4 cup olive oil, divided
- 6 pounds beef short ribs
- Salt and freshly ground pepper
- 1 large onion, coarsely chopped
- 6 carrots, chopped
- 4 cloves garlic, chopped
- 2 celery ribs, chopped
- 1 tablespoon tomato paste
- 2 cups dry red wine
- 3 cups low-sodium chicken stock
- 1 (15-ounce) can diced tomatoes, in thick puree
- 3 thyme sprigs
- 1 bay leaf
- 1 orange, zested
- 1 tablespoon chopped parsley leaves, for garnish

- 1 pound thick-sliced, hickory smoked bacon (this makes ALL the difference!) fried completely chopped into 1/2 inch pieces.
- 1 - 2 pounds fresh broccoli, chopped into 1/2 inch pieces
- 1-1/2 cups dried cranberries
- 1 cup thinly shredded mild cheddar cheese
- 1 cup slivered almonds
- 1 cup sunflower seeds
- 1 - 2 cups mayonnaise
- 4 Tbsp. red wine vinegar
- 3 Tbsp. sugar

Shells: Put all liquid ingredients in blender and blend, slowly add flour
- Shell:
- 2 cup water
- 2 cup flour
- 6 eggs
- 1/2 tsp salt
- Filling:
- 2 lbs ricotta
- 2 tsp salt
- 1/4 cup Italian parsley, chopped
- 1 cup parmesan
- 4 egg yolks, beaten
- 7 cups mozzarella, shredded
- 1 pkg of frozen spinach, cook and squeeze out all water
- Spaghetti Sauce:
- 1 recipe of sauce (see Esposito spaghetti sauce)
