Roasted Beet Salad

Drizzle the beets with olive oil and salt
- 1 pound beets, washed and stems trimmed
- 2 ounces fresh goat cheese
- 2 tablespoons mustard vinaigrette or balsamic vinaigrette
- 1/4 cup pistachios, shelled and toasted
- (MUSTARD VINAIGRETTE)
- 1 tablespoon white wine vinegar
- 3 tablespoons olive oil
- 1 tablespoon whole grain mustard
- 1 clove garlic, minced
- kosher salt and freshly ground black pepper, to taste
Sweet Potato Rounds

- 2 medium sweet potatoes
- 1 (5.2-ounce) box Boursin cheese (any flavor)
- 1 cup dried cranberries, chopped
- 1 cup walnuts or pecans, chopped fine

- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons olive oil, divided
- Kosher salt and freshly ground black pepper, to taste
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 cups shredded green cabbage
- 1 carrot, peeled and grated
- 3 cups baby spinach
- 2 tablespoons chipotle pepper, in adobo sauce
- 1/4 teaspoon oregano
- 1/2 teaspoon cayenne pepper
- 12 (6-inch) corn tortillas, warmed
- 2 cups Monterey Jack cheese
- Jalapeno Cream sauce
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 3/4 cup sour cream
- 1-2 jalapeños, seeded and minced
- 1/2 teaspoon garlic powder
- Kosher salt and freshly ground black pepper, to taste

Nanny's Frosting

Nanny always doubled this recipe and froze what she didn't need
- 1 cup milk
- 2-3 T corn starch (mix with a little milk before adding)
- 1/2 c. crisco
- 1/2 c. butter
- 1 tsp vanilla
- 1 cup powdered sugar
- 1 tsp vanilla
- For chocolate add 1/2 cup cocoa
Zucchini Bread

Beat eggs, oil, sugar and vanilla
- 6 eggs, beaten
- 2 cups oil
- 4 cups sugar
- 6 cups flour
- 2 T. vanilla
- 2 tsp. salt
- 2 tsp. baking soda
- 2 T. cinnamon
- 1/2 tsp baking powder
- 4 cups grated zucchini
- 1 cup pecans, chopped

Braised Chicken Thighs and Mushrooms

- 1 T. olive oil
- 6 chicken thighs
- 1 T. esseence (recipe below)
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 T. Butter
- 1 lb mushrooms, sliced
- 1 c. onions, sliced
- 2 T garlic, minced
- 2 T. flour
- 2 T. tomato paste
- 2 c. chicken stock
- 2 T. fresh rosemary, chpd
- Polenta, egg noodles or rice
- Essence
- 2 1/2 T. paprika
- 2 T salt
- 2 T garlic powder
- 1 T pepper
- 1 T onion powder
- 1 T cayenne pepper
- 1 T oregano
- 1 T thyme
- Makes 2/3 cup
Nanny's Pastries

Cut butter into flour and salt with pastry blender, sprinkle in yeast
- Dough:
- 4 cups flour
- 1/2 tsp salt
- 1 1/4 c. butter, room temp
- 1 pkg. yeast
- 1/2 c. milnot soured with 1 T vinegar (set aside for 10 minutes)
- 4 egg yolks
- 1 tsp vanilla
- Filling:
- 6 egg whites - let sit until room temp
- 1 1/2 c sugar
- 1/2 tsp vanilla
- 4 1/2 oz fine ground walnuts

- 1/2 cup butter
- 1/2 lb mushrooms, sliced
- 1 1/2 lb. beef tenderloin, cut into 2" squares
- 1/4 cup flour
- 1/4 cup sherry or sauterne
- 1/2 cup crushed tomatoes
- 2 medium tomatoes, cut up
- Beef stock
- 10 oz pappardelle or thick pasta
- (can substitute variety of peppers in season such as banana, melrose, etc. - don't use any hot peppers)
