Ingredients

  • Sandwich

  • 1

    corned beef brisket (3-4 lbs)

  • rye bread

  • sauerkraut

  • swiss cheese

  • Thousand Island dressing

  • mustard (optional)

  • Thousand Island Dressing

  • 1

    cup mayo

  • 1/2

    cup ketchup

  • 1/4

    cup pickle relish

  • 1

    T. lemon juice

  • 1

    hard boiled egg, chpd fine (optional)

Directions

Put corned beef in crockpot in the morning, cover with water. Cook on low for 6-8 hours. When done take out and slice against the grain. Construct sandwiches: Butter outside of both pieces of bread, put in non-stick pan, then layer swiss cheese, corned beef and sauerkraut. Flip to other side until heated through and cheese is melted. Serve with Thousand Island and mustard (optional)
