Cold Avacado and Crab Soup

Combine avocados, stock, garlic, lemon juice, and 1/4 tsp
- 2 ripe avocados, peeled and pitted
- 2 cups chilled chicken stock
- 2 medium garlic cloves
- juice from 1/2 lemon, plus more to taste
- 1/2 tsp. salt
- 12 oz. crab meat
- juice from 2 limes
- 2 tbsp. olive oil
- 1/4 cup chopped cilantro
- 1/2 cup finely chopped red onion
- salt and pepper
Gingered Butternut Squash Soup with Spicy Pecan Cream

Preheat the oven to 350°
- 2 large butternut squash (5 1/2 pounds), halved lengthwise and seeded
- 1 tablespoon extra-virgin olive oil
- 3/4 cup pecans (2 ounces)
- 2 tablespoons unsalted butter
- 1 large onion, cut into 1/2-inch dice
- 1 small fennel bulb—halved, cored and cut into 1/2-inch dice
- One 1 1/2-inch piece of fresh ginger, peeled and finely chopped
- 6 cups chicken stock
- One 14-ounce can of unsweetened coconut milk
- 3/4 cup chilled heavy cream
- 1 teaspoon hazelnut oil
- 1/8 teaspoon cayenne pepper
- Kosher salt
- 1 1/2 tablespoons fresh lemon juice
Creamy Vegetable Dip

This is Grandma's recipe from long ago
- 2 eggs, beaten
- 2 tbsp. vinegar
- 1 or 2 tbsp. sugar
- 1 tbsp. butter or margarine
- 1 pkg. (8oz.) cream cheese, softened
- 2/3 cup green pepper , chopped
- 1/3 cup grated onion
- 2 tbsp. chopped pimiento
- 1/2 tsp. hot sauce
- 1/8 tsp. salt

- 8 large eggs
- 1 1/2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 4 cups Italian bread cubes (1 inch)
- 6 ounces Virginia ham, cut into 1/2-inch dice (1 1/2 cups)
- 6 ounces Gouda cheese, cut into 3/4-inch dice (1 1/2 cups)
- 1/2 cup julienned sun-dried tomatoes, drained
- 1/4 cup plus 1 tablespoon snipped chives
- 1 cup coarsely grated Cheddar cheese (about 4 ounces)

In a large skillet cook bacon over moderate heat until crisp and with tongs transfer to paper towels to drain

- 1/4 cup cider vinegar
Herb Parmesan Cream Sauce

- 2 cups heavy cream
- 2 tbsp fresh basil, chopped (or 2 tsp dry)
- 1/4 cup Parmesan cheese, grated
