Pulse bacon several times in a food processor to coarsely chop
- 1 pound applewood-smoked bacon, cut crosswise into 1/2' pieces
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped shallots
- 3 garlic cloves, chopped
- 2 1/2 cups cooked (or three 10-oz. bags frozen, thawed) spinach, squeezed dry, chopped
- 1/4 cup crème fraîche or sour cream
- 2 cups coarse fresh breadcrumbs made from day-old white bread
- 1/2 cup finely chopped scallions
- 1 teaspoon chopped fresh sage
- 1 teaspoon chopped fresh thyme
- 1/4 teaspoon nutmeg, preferably freshly grated
- Kosher salt and freshly ground black pepper
- 2 large eggs, whisked to blend
- 1 5-bone standing beef rib-eye roast (10–13 lb.), chine bone removed, fat trimmed to 1/4' thick

- 1 14 oz. whole peeled tomatoes with juice
- 2 Tbsp. butter
- 1/2 onion, peeled and left whole

Hearty Autumn Wild Rice Soup

In a 4 quart pot, bring the broth and rice to a boil over medium high heat
- 6 cups chicken broth (more if needed)
- 2/3 cup wild rice
- 1 cup shallots, fine dice
- 1 carrot, peeled, fine dice
- 1 celery stalk, fine dice
- 2 cups half and half milk
- 1/4 cup all purpose flour
- 2 tsp fresh thyme leaves
- 1/2 tsp black pepper
- 1 cup shiitake mushrooms, sliced
- 2 tbsp pure maple syrup
- Kosher salt, to taste

This sauce is best if it sits overnight
- Sauce:
- 1/2 cup fresh basil leaves
- 1 tbsp. fresh tarragon
- 1 tbsp. fresh parsley
- 2 ripe tomatoes
- 1 clove garlic, chopped
- 1/2 cup olive oil
- salt and pepper
- juice and rind on one orange
- Chop all of the herbs and the tomato together. Add the olive oil, the orange, and salt and pepper. Stir well to combine and taste for seasoning.
